El Yunque National Rainforest in Puerto Rico 🇵🇷 We went on a treacherous hike the day following a heavy rainfall. Unless you’re practicing for a triathlon, don’t do it! If you do, make sure you take a walking stick. The ground is rocky, muddy and very slippery.

There are less challenging trails than the 45 minute hike, as we learned after. The forest is magical with the sounds of the birds and falls.

Our first morning in Puerto Rico on our way to breakfast. Like so many arts districts, Santruce is under gentrification. Hope they keep the original art deco buildings and never get rid of roosters on the loose 🐓🇵🇷

What is this? Is it a butterfly, a moth, a hummingbird, or a mutant?
I sent this video to a friend in London, who looked it up and discovered it was a Hyles Lineata, also known as the White lined sphinx moth and is commonly known as a “Hummingbird moth”! It’s commonly found in North America, Central America, West Indies and parts of Mexico as well as in warmer regions of Canada.
This energetic insect is on a constant sugar high from all the nectar it ingests. They are bird-like in size to the Hummingbird and share a similar flight pattern as well as flower preferences.
I feel privileged to have witnessed this moment during this time with global warming and the extinction of many species. We are the steward of our planet and we need to live consciously, responsibly, and respectfully to keep magic like this alive.

Echinacea Sombrero Granada - Coneflower is a drought tolerant perennial which is an attraction to bees and butterflies. I planted this one last autumn and I thought it didn’t survive last winter’s unusually long cool, wet winter. This hardy beauty surprised me with lovely golden blooms! Echinacea comes in many colors and has been used for centuries as an herbal remedy to support the immune system.

Ube Pancakes… Yum!!! I’m not a pancake fan but this Ube pancake mix is addicting! Add seasonal fruit and it’s absolutely divine. But than again, adding fresh fruit to anything takes it to another level of deliciousness 😋🥞🍌🍑🍓🫐
