Not every milk behaves the same in coffee.
Whole milk is sweet and creamy and foams well. low-fat gives more foam but a thinner taste. lactose-free tastes a little sweeter. oat is the closest to dairy, and the barista versions foam best. soy foams well but can split in hot, acidic coffee. almond is light and nutty, with a thin foam.

if a milk splits, let the coffee cool for a minute and pour the milk in slowly.

No milk frother? A jam jar works.
warm the milk until it's hot to the touch but not boiling. fill the jar a third full, close the lid tight, shake hard for about thirty seconds. the milk gets about twice as tall.
pour it over a capsule shot and spoon the foam on top. whole or low-fat milk works best.

Most of what you call flavor is smell.

pinch your nose, take a sip, hold it for a second. you mostly get bitter, a little sweet, maybe sour. then let go. that's when the cocoa and the nuts show up.
it's also why a cold makes coffee taste like nothing.

In Spain, you can get your espresso over a layer of condensed milk.
café bombón starts with a spoonful of sweetened condensed milk in a small glass. the espresso goes in slowly on top, so the two stay in layers until you stir. it's said to come from Valencia.
another Spanish habit: a hot espresso with a glass of ice on the side. you decide how fast it cools.
At home: a spoon of condensed milk in a small glass, one capsule shot poured slowly down the inside of the tilted glass. not the same, but close.

I cut one open so you don't have to.

Inside a standard capsule: about 5 to 6 grams of ground coffee, and nothing else. The aluminium is there to keep air and light out until the second the machine pierces it.

That's why it's ground finer than you'd expect, and why the shot is short.

Orange juice and espresso. It shouldn't work.

Fill a glass with ice. Fill the glass two-thirds of the way up with orange juice. Pour one capsule shot slowly over the back of a spoon so it sits on top.

stir before you drink. It tastes a bit like a chocolate orange.

The 4 pm coffee is still there at bedtime.

caffeine has a half-life of roughly five hours. So half of a 3 pm espresso is still in your system at 8 pm, and a quarter at 1 am.

a simple rule: last cup about eight hours before bed. bed at 10 → 2 pm bed at 11 → 3 pm bed at midnight → 4 pm

it's different for everyone. some people sleep fine after a late espresso. most of us just think we do.

The water isn't decoration.

In a lot of Italian bars, the small glass comes first for a reason. One sip clears your mouth, so the first taste of espresso is the coffee and not whatever you ate before.

Nobody will stop you from drinking it after. But try it before once.

In Mexico, coffee gets cooked with cinnamon.

café de olla is simmered in a clay pot with a cinnamon stick and piloncillo, a dark unrefined cane sugar. the story goes that it was made for soldiers during the revolution. the clay pot is said to give it an earthy taste you can't get from metal.

Mexico also grows a lot of its own coffee, mostly in Chiapas, Veracruz, and Oaxaca.

at home: a lungo, a cinnamon stick left in the cup for two minutes, a spoon of dark brown sugar. not the same, but close.

tiramisu, the lazy way.

Break two ladyfingers into a glass. Pour a hot capsule shot over them. two spoons of mascarpone stirred with a little sugar. cocoa on top.

Ten minutes in the fridge if you can wait. I usually can't.

Same capsule, three different cups.☕

ristretto: about 25 ml. less water, thicker, a little sweeter. espresso: about 40 ml. the one most capsules are designed around. lungo: about 110 ml. more water through the same coffee, so more bitterness comes with it.

The sleeve usually tells you which size the capsule was made for. Worth a look before you press.
