Sushi at home in under 30mins🍣

I promise you, sushi is not as complicated as it looks. And this super quick recipe really satisfies those ill-timed sushi cravings.

🛒 Ingredients
Salmon
Mayo
Sriracha
Cucumber
Avocado
Sushi rice
Rice vinegar
Sesame Oil
Sesame seeds (optional)

Dip: soya sauce, wasabi (store bought in a tube).

🍽️Method
1) Prep sushi rice (I took 1 cup) and boil and simmer with salt. Once fluffed up, mix in rice vinegar (1-2 tbsp) and sesame oil to taste and some seasame seeds (optional)
2) Airfry/Bake Salmon fillets - I added no seasoning, just threw the fillets in the airfryer
3) Once cooked, shred the salmon with mayo, sriracha & chopped cucumber for added crunch
4) On parchment paper (replacement for a sushi mat), lay shiny side down the seaweed for sushi, on top of the seaweed, spread the rice leaving out the edges, and at the edge of the layer of rice, put a line of salmon filling & long thin slices of cucumber & avocado
5) Roll as shown - make sure the parchment paper doesn’t roll into the sushi.
6) Slice or eat like a burrito and enjoy!!!

Basbousa / بسبوسة

⏳Basbousa has deep roots in Egyptian culinary history and is considered one of the most iconic desserts in Egyptian and broader Middle Eastern cuisine. It is believed to have evolved from desserts made during 🤴🏾Pharaonic Egypt, where honey and semolina were popular.

But I made this for my friend’s Eid gathering 🌙✨
It reminded me a time from my childhood, when dad on his way home from work would pick up basbousa and a few pieces of tulumba to bring home - almost 20 years ago now.

🛒 Ingredients
All ingredients can be bought at a basic grocery store

For the Basbousa:
2 cups coarse semolina
1 cup granulated sugar
1 cup plain yogurt (room temperature)
½ cup unsalted butter, melted and cooled (I used Ghee)
1 cup shredded coconut (Dont skip!)
1 teaspoon baking powder
½ teaspoon baking soda
Whole almonds for decoration
Tahini or butter for greasing the pan (I used Tahini for the nuttiness!)

For the Sugar Syrup:
1½ cups granulated sugar
1 cup water
1 teaspoon lemon juice
1 teaspoon rose water or orange blossom water (I used Rose)

🍽️ Method
- Make syrup: sugar, water, rose water, lemon juice
- Mix dry ingredients in one bowl: semolina, sugar (I ran out of granulated sugar so used icing sugar in the clip), salt, coconut.
- In another bowl wet ingredients: yogurt (room temp), melted ghee, baking powder & baking soda.
- Combine wet & dry into a single bowl, mix! Batter will be thick.
- Grease pan w/ tahini and spread the thick semolina batter.
- Score top in diamond shapes, press 1 almond per piece.
- Bake at 350°F / 175°C for 30–35 mins till golden.
- Right out of oven, pour cooled syrup over basbousa. Let it soak.
Cool, cut, serve and Enjoyyy 🤍🤍

Tip: Baking soda + yogurt = reaction to make sponge super tender! Tahini base = nutty flavor bonus.

The Round Kebabs

it’s literally what they are known as in my family 😂.

The recipe has been passed down from my maternal grandmother and her mother. Every time I make it, the flavours shock my friends and they fall in love with it. It’s my favourite thing to ask my mom to make for me.

Ingredients:
Green onions, fresh mint, fresh coriander, onions - all nicely chopped and lots of it
Chicken or Beef Mince
Coriander seeds (fresh ground), whole cumin seeds, red chilli flakes, salt.
The magic ingredient: pearl millet flour. باجره in Urdu. دُخْن in Arabic
Mix all together and make into round balls, deep fry. Sprinkle lots of lemon and serve.

Cheese Wontons, no frying & 2 ingredients only!

This has to be the best crowd-pleaser food idea I have tried so far!! So low effort, and my friends LOVED it.

🛒 Ingredients
Cream Cheese (I got low-fat one)
Sweet Chilli Sauce (the standard one you get at almost any grocery store)
Filo Sheets (same ones used to make baklava)
Oil or Melted Butter

🍽️ Method

Mix cream cheese and sweet chilli sauce. If the mixture feels a bit too liquid, add cornflour (I didn’t do it when I made them, but wish I had!). For the filo pockets take a minimum of 3 sheets layered with oil or butter and fill with a dollop of mixture, and tie with the foil ties (or any other oven-safe ties you may have).

Bake at 180 degrees Celsius till golden brown.

Let the pockets cool slightly before serving.

Enjoy 🤍

Chicken Kabsah, the love of my [foodie] life.

This is one dish I crave and yearn and dream about all the time. I finally decided to share it with you all ♥️

🛒 Ingredients
1 whole chicken, skin on, cut in half like I did or cut into 4–6 pieces
2 cups long-grain basmati rice (soaked 30 minutes, drained)
4 cups water
2 medium onions, finely sliced
2 medium tomatoes, finely chopped
3 cloves garlic, minced
2 medium carrots, grated (optional)
1 green chili (optional), slit (I chopped it)
3 tbsp vegetable oil or ghee (I mixed them)
2 tbsp tomato paste
1 small dried black lime (loomi), poke a hole (or use 1 tsp dried lime powder)
1 chicken bouillon cube
Salt, to taste
Orange zest

Garnish: Sliced Almonds, Coriander

Kabsa Spices Mix: (or you can get the mix ready made at any Middle Eastern store)
1 tsp ground cardamom
1 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground cumin
1 tsp ground coriander
1 tsp black pepper
1 tsp paprika
1 ½ tsp ground turmeric
1 tsp ground allspice
½ tsp ground nutmeg
½ tsp ground ginger

🍽️ Method,

- Sauté onion, garlic, tomato paste.
- Add the spices, saute some more.
- Add chicken, and stir till the chicken is coated with the spices.
- Add water and bullion cube.
- Let it cook on medium low heat with the lid covered for about 25 mins (or until the chicken is cooked).
- Remove chicken and put on baking tray and baste with a mixture of the Kabsa broth and tomato paste.
- Bake for 10mins so the skin crisps/chars.
- In the meantime, add the soaked rice to the Kabsa broth.

Tip: Ensure when you dip your finger (not all the way), the gap between the rice in the pot and the top level of broth is no more than an inch apart (top part of your finger). If it is more than that, remove the extra broth and keep aside, otherwise rice will become soggy.

- Cover with cloth and lid and cook the rice on low medium heat for 20mins (or until rice is fluffy).

- Serve on a Kabsa platter and top with roasted almonds and Coriander for garnish. Kabsa is incomplete without the Kabsa tomato sauce (recipe is posted in a separate video).

Enjoy!! 🤍

Daqoos/ دقوس/ Spicy Tomato Sauce originating in the Gulf

So simple, but the way it elevates every Arab rice dish, is hard to explain. I served this with Kabsa & my friends couldn’t stop raving about the sauce more than the actual food :)

🛒Ingredients:
Tomatoes
Coriander
Green chillies (the fat ones)
Garlic
Cumin
Salt
Pepper
Olive oil
Lemon/Vinegar (I did not add it as I don’t like the tanginess)
Tomato Paste

🍽️ Method
Sauté garlic and chillies in olive oil, add tomato paste and saute further till oil separates. Added blended tomatoes & stir. As colour starts to change, add spices & a little bit of water to then let it simmer on low heat - this will allow all the flavours to meld together. Add lots of chopped coriander in the mixture and let it simmer a little more.

Pour into your serving dish. You can serve it warm, but I prefer to have it at room temperature or cold with a main dish.

Enjoy 🤍

Share your tips. How do you store your Japanese knife?

As much as I love cooking, the process of chopping up the ingredients I am yet to learn to enjoy. This is my first purchase of a Gyuto knife, and will upgrade to better ones as I get comfortable using this. Excited to begin using it 🔪👩🏻‍🍳

China Grass (Agar Agar) Milk Pudding✨
4 Ingredients only!

China Grass or Agar Agar is a jelly like extract that comes from red algae. It acts as a gelling agent and helps in making super quick puddings such as this one!

🛒Ingredients
Water ~ 500ml (0.5L)
One pack China Grass (available at any grocery store)
1.5 to 2L of milk
1 can condensed milk
Coarse chopped pistachios
Cardamom 3 teaspoons
Saffron (optional)

🍽️ Method:
Dissolve the China grass into water on low heat. Once dissolved, add milk and stir till it heats up. Add cardamom, saffron & condensed milk and keep stirring on low to medium heat for 5 minutes. Pour into serving dish and let it cool down for 10-15mins before putting into fridge for a minimum of 6 hours or overnight, so it thoroughly cools and solidifies.

Slice into squares and serve. The chillier it is served, the better. Enjoy 🤍

Pineapple Salad 🍍Tangy & Sweet and so so refreshing!

Did you know Pineapples have anti-inflammatory and pain-relieving properties? But having them on their own can feel a bit boring. This salad is literally the perfect way to enjoy them!

🛒Ingredients
- 1 pineapple
- 1 Avocado
- 1 cucumber
- 2 medium red onions
- handful of fresh cilantro

Dressing (mix and match to taste)
- Honey
- Apple cider vinegar (stick to max a tablespoon)
- Lime juice
- Olive oil
- Salt & Pepper
- Red chili flakes

🍽️ Method
Chop all the fresh ingredients, make sure the pineapple chunks are medium sized. I prefer using a fresh pineapple instead of canned as it’s a) healthier and b) better flavour.
Mix all the dressing ingredients in a separate bowl and pour on top of the chopped ingredients & mix mix mix.

Make sure to use the ripest pineapple (for the sweetness) and red onions for their distinct flavour & look.

Enjoy 🤍
