Who: @gaz.herbert at @comalnyc

Born in Mexico City and raised across Mexico, Colombia, England, and Russia, @‌gaz.herbert trained at Le Cordon Bleu in London before cooking at The River Café and Michelin-starred Ikoyi. In 2025, he opened his debut restaurant, Comal, a 40-seat neighborhood spot on the Lower East Side, where an amazing pantry of dried Mexican chilies and spices meets fresh seasonal produce, free from the rules of any one cuisine.

Up Next: Up Next: Catch Gaz in London for a pop-up at @carousel_ldn from November 10–14. He’s also working on a cookbook with his Head Chef, Scott McKay (@localrestaurantidiot), with plans to travel across Mexico to shoot the process, build the dishes, and find fresh inspiration along the way.

We had 300 cempasúchil (marigolds)delivered this morning. In Mexican tradition, their color and scent help guide the spirits of loved ones home for Día de los Muertos.

This week we’re building our ofrenda, and we invite guests to bring a photo, or write the name of someone you’re remembering and we’ll keep them with ours through November 2nd. by @comalnyc

Some food and design bits from in and around cdmx this week- a constant source of inspiration for us. by @comalnyc

Comal is the hit Lower East Side Mexican from Gaz Herbert, whose flavour-forward, polyglot style was forged in iconic London kitchens like The River Café and the OG Ikoyi.

Playfully bypassing tradition, while tapping into his deep bag of tricks, dishes like ‘Mangalitza Lardo Skewer Al Pastor’; ‘Devon Crab Tamale, Huacatay, Aji Dulce’; and ‘Rib Eye Steak, Pimiento, Mil Hojas Potato, Hoja Santa’ pay homage to Gaz’s Mexican, Colombian and British upbringing whilst keeping things inventive in the process.

Chef-owner Gaz is joined by his Canadian head chef Scott McKay, who cut his teeth at the likes of Amass, Fäviken and Atomix before the duo opened Comal together last summer. Drawing from the colourful spice shops of Alphabet City and its neighbouring streets, alongside dried chillies, fruits and Mexican imports like tomatillos, chiltepin and crickets, Gaz and Scott have developed a collaborative, produce-led approach that balances instinct with precision.

The result is a tight menu of inventive originals that are packed - and we mean packed - with flavour. If their sold-out collabs with Kiln and Smoking Goat earlier this year are anything to go by, this one promises to pop off pronto. Run, don’t walk. by @comalnyc

@comalnyc is a Lower East Side restaurant I’d return to on my next trip to New York.

Inspired by Mexico City and guided by seasonal produce from the Northeast, its cooking is full of character. What stayed with me was the balance: bold flavors that surprised me, yet always felt considered.

The room has its own point of view, with art that changes over time. By the end of dinner, I was already thinking about who I’d bring back.

If you’re deciding where to eat in NYC, save Comal for a memorable dinner.
