Chicago’s baldest, most face-tattoiest chef is back! Cooking professionally for well over a decade in everything from fry joints to michelin star restaurants, Henry is making his Comedy and Caviar debut!
After years spent as Chef De Cuisine at Le Bouchon, Henry is embarking on his next big chapter! Opening up pop up series/future brick and mortar Bébélala (crybaby in Québécois), Henry and his partner @leah_wolff bring a little intercontinental flair via Montreal & Chicago.

He’s a showman with a dash of “fuck you.” Which is no surprise why he’s one of the most repeated and cherished chefs of Comedy and Caviar!

Meet Chef Jimbo:

He was 19 when he landed his first official kitchen job, working Sunday brunch at his mother’s neighborhood bar while preparing to become a father.

After years spent learning the trade in Chicago kitchens, he earned his first sous chef position at Carriage House at age 25. Around the same time, Food Network producers invited him to compete on Guy’s Grocery Games, an experience that became a memorable milestone in his career.

Some of the most influential stops along the way included Longman & Eagle, where he worked prep in a high-energy kitchen known for its food and whiskey program; Perilla, where he developed an appreciation for Korean cooking techniques; and Good Measure, a short-lived punk bar in the West Loop with a small, tight-knit crew and a strong sense of camaraderie.
He later helped open Hash on Western Avenue from the ground up, gaining valuable experience in building and launching a restaurant.

Jimbo was celebrated as Chef at Le Bouchon as the glue between front and back of house, making every shift feel like “a good hang with the pals.”

🌟 MEET CHEF TACO 🌟

Born and raised on the West Side of Chicago, @cheftaco_ grew up cooking Southern classics with his Mom and Grandma. He started his culinary journey at La Sardine before transferring to @bouchonchicago, where he spent nearly a third of his career and fell in love with French cuisine.

After COVID, he joined @rosemarychicago as a line cook and quickly worked his way up to sous chef. During that time, he also had the opportunity to work as part of the private chef team for the USA Cycling Team during the 2024 Olympics.

Since then, he has helped the Day Off Group open their fourth restaurant and is currently the Executive Sous Chef at @bartuttochicago. He’s excited to make his debut at Comedy and Caviar, where the laughs are just as good as the bites. taken in Le Bouchon by @comedyandcaviar
