Crispy tofu and red pesto flatbread 🍕🍅🍯

Serves 1 | 24g protein

Crispy smoky tofu, red pesto, melted mozzarella and juicy tomatoes on a gluten-free flatbread, finished with fresh rocket, chilli flakes and a drizzle of hot honey.

If you want it more cheesy and pizza-like, I’d reduce the amount of tomatoes and increase the mozzarella.

Ingredients:
- 1 @warburtonsgf soft flatbread
- 97.5g tofu (pressed for at least 1 hour)*
- 20g red pesto
- 30g mozzarella
- 75g plum tomatoes, halved
- Rocket
- 1 tsp hot honey
- Chilli flakes

For the tofu (4 servings)
- 4 tsp smoked paprika
- 2 tsp garlic granules
- 1 tsp mixed herbs
- 3 tsp olive oil
- Salt and pepper

Method:
1. Pat the tofu dry, then roughly crumble it into small pieces with your hands
2. Toss the crumbled tofu with the smoked paprika, garlic granules, mixed herbs, olive oil, salt and pepper
3. Air fry the tofu at 200°C for 10-12 mins until golden and crispy
4. Spread the red pesto over the flatbread, then top with the mozzarella, crispy tofu and plum tomatoes
5. Bake at 180°C for around 8 minutes, until the cheese has melted and the edges are crispy
6. Add in the tofu halfway through cooking to let the cheese fully melt
7. Finish with fresh rocket, chilli flakes and a drizzle of hot honey
8. Slice and serve immediately

* I find it easiest to prep the whole 390g block of tofu at once, then weigh out 97.5g each day. The cooked tofu weighs around 250g, so divide the cooked amount into four equal portions.

Tip: I added the tofu before baking, but for a more pizza-like result, you can add the tofu halfway through instead.
