A tale of two gardens

Two chefs. One dock in Cordova, Alaska. they met last summer at Copper River’s Salmon Camp — and that spark just turned into seven courses at Confluence Vineyards.

Chefs Courtney Wright & Cameron Dunlap of Morchella built this menu around what first got them fired up together — gardening — with peak-season produce, wild foraged finds, and bright herbs pulled straight from the Pacific Northwest.

THE MENU

Three Small Foraged Bites — smoked duck breast toast, herbed goat cheese w/ cucumber & sourgrass, compressed melon w/ honey, lime & pimpanelle

Smoked-Cured Copper River Sockeye Salmon — sweet pea, kiwi, arugula, lemon

C.S.P. Squab Leg — birch syrup, watercress, potato purée

C.S.P. Squab Breast — cherry-glazed beets, morels, hazelnut gremolata

Palate Cleanser — elderberry granita

Maple Leaf Duck Tortellini — duck fat parker house rolls, duck butter

Red Huckleberry Pavlova — coconut whipped cream

Every plate a little love letter to the garden.

Hi Barre Besties!

The countdown is on! We can’t wait to see you at our annual Pure Barre Pop-Up at Confluence Winery on Saturday, June 20th at 10:00 AM.

A few must-knows before we meet on the lawn:

We’re expecting another fantastic turnout! Confluence Winery has a beautiful, spacious outdoor setting, so there will be plenty of room for everyone to enjoy class comfortably.

Parking is limited. If you’re able to carpool with a friend (or two!), we’d greatly appreciate it.

What to bring:

• Mat
• Water bottle
• Tennis shoes or socks
• A light layer for after class

Don’t rush off after class! Stay and enjoy a lovely afternoon at the winery with your barre besties. Confluence will have wine available to purchase by the glass or bottle, and Lil Conejo will be serving their delicious lunch featuring sandwiches on their famous focaccia bread and fresh salad.
