An amazing lamb dish Butterflied Leg of Lamb with Pomegranate Salsa by @sabrinaghayour from her book ‘Feasts’. @sabrinaghayour has the most amazing lamb recipes in her books. This was so easy to do after my husband had butterflied the most amazing lamb leg from @fieldandflower. We haven’t had lamb as good as this in a long time. One of our favourite chicken dishes that we make a lot. Chicken with Fennel and Clementine based on an @ottolenghi recipe from his book ‘Jerusalem’. Fennel and clementines/oranges work so well with chicken, and cooked with some aniseed alcohol. I used Pernod this time. Amazing chicken thighs from @herbfedpoultry, fennel and clementines from @robertshaws_farm_shop. Korean Baked Chicken Lollipops. A lively, simple chicken recipe by @stephs_fooddiary made with chicken legs from @herbfedpoultry. After a wonderful delivery of various types of chicken from @herbfedpoultry I made this for a quick, easy, satisfying Saturday dinner. The recipe is extremely good, and the chicken delicious. A lovely Sicilian pit roast ‘Stufato di manzo alla Siciliana’ for dinner last night from @gennarocontaldo wonderful book ‘Slow’. It is made with beef brisket, and cooked in stock for several hours. The brisket was very tender, and the spices subtle, but excellent. Last night’s dinner Crab and Cid Fishcakes from @cheftomkerridge new book ‘Tom Kerridge Cooks Britain’, published by @bloomsburypublishing. Very simple to make, and served with a wonderful mayonnaise with lemon, capers, and dill. @robertshaws_farm_shop Quick to put together on a Saturday evening, and very tasty, and surprisingly filling. We used a mix of Panko breadcrumbs, and our homemade breadcrumbs to form the panné mixture. A very simple, Spanish-style chicken traybake, with red onions, different coloured peppers, tomatoes, a tiny piece of Chorizo that was in the fridge, some saffron, and herbs. If I had had some olives I would have added those, too. I seasoned the chicken thighs, then smeared with paprika, and smoked paprika. Roasted in the oven for about 50 minutes. Cooking times will vary according to the oven. Very easy, but tasted delicious. The last of our wonderful turkey from @herbfedpoultry I made an old-fashioned stew from the last pieces of turkey, some pancetta, and lots of vegetables from the pantry, along with some home-grown Yorkshire herbs. It reminded me of my grandmothers’ kitchens. So simple, using up the leftovers, but so delicious, and healthy, apart from the swirl of cream added to finish the dish off. These are Christmas Mincemeat Bakewells that we had for our Christmas dessert. This is another wonderful recipe from the brilliant ‘Irish Bakery’ by @cheriedenhamcooks with wonderful photography by @montgomeryphoto. I used a different mincemeat recipe from @nancy.birtwhistle as I had already made that. It is a lovely mincemeat, and keeps well. The quantity can easily be doubled. The Bakewells are easy to make despite having three stages, including the mincemeat. Another wonderful Christmas turkey from @herbfedpoultry in Yorkshire. We have been buying their turkeys and chickens for several years, now, and they are the best turkeys we have ever had. Fed on a diet of cereal and herbs, these Bronze Turkeys are full of flavour, and so moist. They also come with herbs for a stuffing, cooking time guides, cooking tips, and recipes for leftovers. They are worth every penny, and nothing is wasted. We make lots of leftover recipes, and lots of stock. Made this beautiful Winter Pasta dish by @ben.tish from his book Mediterrea. Sadly, I’d already visited our local farm shop @robertshaws_farm_shop so was unable to buy beef cheeks.
