Classic Chicken Parmigiana - a delicious blend of pan-fried, breaded chicken covered with tomato sauce, molten cheese and finished with a sprinkle of fresh basil. This is classic comfort food that’s so satisfying!! The most delicious Chicken Parmigiana made in your very own kitchen. This is certainly one to make over the holiday season and any leftover chicken can be stored and saved in the fridge for up to 3 days (trust me when I say the flavor gets even better)! ✨⁣
⁣
INGREDIENTS:⁣
2 pounds boneless, skinless chicken breast (use chicken thighs for even more flavor)⁣
½ cup all-purpose flour⁣
3 large eggs, beaten⁣
2-3 cups panko bread crumbs⁣
1/2 tsp salt⁣
1/4 tsp black pepper⁣
Olive oil, for frying⁣
2 cans (800g) diced tomatoes ⁣
4-5 garlic cloves, finely sliced ⁣
3-4 bay leaves, for tomato sauce ⁣
1 cup finely grated parmesan⁣
2 cups shredded mozzarella ⁣
Fresh Basil, for garnish

METHOD:
1. Heat oven to 400 degrees. Place chicken cutlets between two pieces of parchment or plastic wrap.Using a kitchen mallet or rolling pin, pound meat to even ¼-inch-thick slices.

2. Heat oil in a saucepan over medium heat. Add garlic, cook for 2 minutes until fragrant. Add diced tomatoes, bay leaves, salt and pepper, stir for 15 seconds. Cover, then simmer 10 minutes on low until thickened. Cover and keep warm.

3. While sauce is simmering, place flour, eggs and panko crumbs into three wide, shallow bowls. Season meat generously with salt and pepper. Dip a piece of meat in flour, then eggs, then coat with panko crumbs. Repeat until all the meat is coated.

4. Fill a large skillet with ½-inch oil. Place over medium-high heat. When oil is hot, fry cutlets in batches, turning halfway through, until golden brown. Transfer to a paper towel-lined plate.

5. Spoon a thin layer of tomato sauce over the bottom of a 9-by-13-inch baking pan. Place chicken cutlets over the sauce and top with half the mozzarella. Layer ending with a final layer of sauce, mozzarella, parmesan, sprinkle of salt, pepper and half of fresh basil.

6. Transfer pan to oven and bake until cheese is golden and casserole is bubbling, about 25-30 minutes. Let cool and serve with a sprinkle of fresh basil. by @cookathomewithv

STORY TIME : The very first time my husband cooked for me was on our 4th date and he made Thai red curry chicken in a crock pot. His roommate was a chef so he had all the things in his place at the time. This was also back when we lived in NYC. I was shocked he even knew how to make a curry and it tasted so good! The Caribbean in me said he just might be a keeper as we love a good curry! ⁣
⁣
Fast forward 7 years later, we are still making curry recipes together and it continues to be one of our favorite dishes. Our current favorite is fish curry with barramundi as the star ingredient. The barramundi cooks beautifully and the best thing is the flavor just gets better each day. These are the rare moments when I actually look forward to having leftovers!⁣
⁣
Full recipe below for Barramundi Fish Curry 🍲⁣
⁣
INGREDIENTS:⁣
- Barramundi (skinless fillets) - 500g, cut thick 1 inch cubes⁣
- 1 tbsp yellow curry paste ⁣
- 1 tbsp olive oil ⁣
- 1 onion, chopped⁣
- 4 cloves garlic, crushed⁣
- 1 tbsp grated fresh ginger ⁣
- 1 carrot, sliced ⁣
- 1/2 red bell pepper/capsicum, chopped ⁣
- 1 cup brown mushrooms, sliced⁣
- 2 tbsp fish sauce⁣
- 1 tbsp peanut butter ⁣
- 1 tsp brown sugar⁣
- 1 can (250 ml) coconut cream⁣
- 3/4 cup (200 ml) of water⁣
- 1/2 tsp salt ⁣
- 1/2 tsp black pepper ⁣
- 1/2 lime, squeeze juice ⁣
- 1 tsp fresh thyme leaves, chopped ⁣
- Fresh basil and remaining lime, garnish⁣
- 2 cups jasmine rice, steamed (to serve)⁣
⁣
METHOD:⁣
1. Heat 1 tbsp olive oil in a large saucepan over low heat.⁣
2. Add onion, garlic, grated ginger, thyme and carrots and sauté 4-5 minutes until fragrant.⁣
3. Add bell peppers/capsicum, mushrooms, curry paste, fish sauce, peanut butter and brown sugar. Stir to combine.⁣
4. Add coconut cream, water, salt, black pepper and mix well, stirring until no lumps remain.⁣
5. Bring the curry up to a simmer and simmer for 10 minutes.⁣
6. Add barramundi fillets and lime juice to the pan and cook for another 10-12 minutes, until fish is cooked through.⁣
7. Ladle curry into bowls and serve with steamed rice, fresh basil (or cilantro/coriander leaves) and a wedge of lime.

24-Hour Slow Cooker “Better Than Botox” Turkey Bone Broth! 🍗⁣
⁣
How I turned my leftover Thanksgiving turkey into a delicious bone broth! ⁣
⁣
You can make this bone broth with any leftover meat bones (beef, chicken, turkey, lamb, duck, etc). The goal is to extract as much collagen and nutrients from the bones with the help of apple cider vinegar. ⁣
⁣
Full recipe below! ⁣
⁣
1. Place the leftover bones in your slow cooker. The bones should fill up about 3/4 of the slow-cooker.⁣
2. Chop your vegetables (carrots, celery, onion and garlic). No need to peel as you can also add vegetable scraps (rinse first) into your slow-cooker. You will strain these out before consuming the broth.⁣
3. Fill the slow-cooker with filtered water enough to cover the bones. Season with a generous amount of salt (~ 1 teaspoon).⁣
4. Add 2 tablespoons of apple cider vinegar (trust me you will not notice the taste).⁣
5. Cook on low for 18-24 hours.⁣
6. Add the chopped vegetables to the slow-cooker with 1-2 hours remaining. ⁣
7. Strain the broth through a strainer and cool. A good broth will usually have a layer of fat on the top, and will gelatinize when cooled. Remove the fat with a spoon and discard.⁣
