Make Sunday dinner a little family tradition—everyone lends a hand, and everyone has a seat at the table. This week, we’re grilling tomahawk steak with pasta and meat sauce, roasted carrots, mashed potatoes, pumpkin soup, a hearty fall salad, and apple pie. Whether you’re making one favorite dish or a whole spread, let this be your inspiration to cook together, share a meal, and make time for each other. ❤️

🌸 Living with UC has taught me not to take the good days for granted. Some mornings, I’m grateful just to wake up feeling well enough to enjoy my coffee, prepare a nourishing breakfast, or take a peaceful walk. I’ve learned that happiness doesn’t always come from big adventures. Sometimes it’s found in the simplest moments we once overlooked. 🌿❤️

Homemade beef hash - so simple to make and so so delicious, perfect breakfast.

We started with cooking down our ground beef and remove it from the pan proceed to cooking our chopped potato once that its tender add in chopped onions, garlic, fresh fennel, salt&pepper, then added the meat back in and let it cook all together for about another 1 or 2 and thats it my friends. Enjoy!!

Chocolate Chip Coffee Cake Banana Bread 🍌🍫

Soft, buttery banana bread loaded with chocolate chips and topped with a delicious, golden cinnamon crumble! The perfect combination of banana bread and coffee cake. ☕️

My little secret? It all starts with creaming the butter and brown sugar together until it’s beautifully light and fluffy. That extra bit of patience makes such a difference in creating a soft, tender crumb every single time!

A little baking love goes a long way! ❤️

This one’s definitely going into our upcoming Cooking with Rita & Ayden Cookbook! 📖

Not your mama’s pot pie 😉
We had leftover chicken + sausage so we made it into something NEW. Started with olive oil + butter, sautéed celery, carrots, red onion + garlic until sweet and soft, then tossed in our chopped chicken and sausage. No chicken stock? No problem — just hot water, lots of thyme, paprika, dijon mustard, salt + pepper and let it all cook down into this savory goodness.
Then the best part — layered it with cheese, scooped biscuit batter right on top with an ice cream scooper, baked until golden, and finished with a shower of parmesan.
Crispy, cheesy biscuits on top, creamy, hearty filling on the bottom. Leftover makeover WIN! Who wants a scoop?
Would you try this twist on pot pie?

Living with UC has taught me the importance of flexibility, patience, and gratitude. I still have places to explore, meals to create, and memories to make. Some days I’ll have the energy for an adventure; other days, a peaceful morning is enough. I’m embracing this chapter on my own terms, without letting the unpredictable moments define my future. ❤️
