This is a mocktail worthy of a second round. It’s complex and has a bit of a bite. Honestly that’s what I’m always going for when it comes to nonalcoholic spritz.

Sumac Thyme Lemon Spritz
3/4 ounces Sumac Thyme Syrup
1 tablespoon fresh lemon juice
1 dropper of Celebrate or Shine Bitters
soda water or club soda to top
lemon wedge and fresh thyme sprig, to garnish

Sumac Thyme Syrup
1/2 cup water
1/2 cup sugar
1 tablespoon sumac
3 sprigs fresh thyme

Step 1 – Combine water and sugar in a small saucepan and bring to a boil. Stir until the sugar is fully dissolved, then add sumac and thyme. Let steep for 30–45 minutes, or until fully cooled, then strain to serve.

Step 2 – In an 8-ounce glass, combine 2 ounces Sumac Thyme Syrup with 1 tablespoon lemon juice. Add ice and top with soda water. Stir gently, garnish with a lemon wedge and a sprig of thyme, and serve immediately.

If I were you, I would run to get the very last watermelon. You can find so you can experience this agua fresca.

Watermelon + Grapefruit Agua Fresca

about 2 cups fresh watermelon juice (from 1 small watermelon, cubed and peeled)
about 2 cups fresh grapefruit juice (from 4 ruby grapefruits, peeled)
juice of 1 lime, peel removed
6 full droppers Celebrate Bitters
crushed ice
sparkling water for a light, fizzy finish
Optional Garnishes
lime wheel
grapefruit wedge
small watermelon spear

Step 1
Fill a large glass or pitcher with crushed ice. Add the grapefruit juice, watermelon juice, lime juice. Add a dropper of Celebrate Bitters.

Step 2
Top with sparkling water. Stir to combine. Garnish with a lime wheel, grapefruit wedge, or watermelon spear. Serve immediately.

Prep Tip
If you have a juicer, run the grapefruit, lime, and watermelon through for efficiency. Without one, squeeze the citrus by hand or with a citrus juicer, then blend the watermelon in a food processor and strain for a smooth juice. Aim for about 2 cups each of grapefruit and watermelon juice, plus the juice of one lime.

CBD MOCKTAIL SERIES – No. 27
Dirty Tonic
Makes one drink

2 teaspoons chopped preserved lemon
3 thin slices of fresh lemon wheels
1-2 droppers of Celebrate Bitters
1 can of Fevertree Light Tonic
2-3 Castelvetrano olives

Muddle the preserved lemon and 2 lemon wheels at the bottom of a glass. Top with ice. Add 1-2 droppers of Celebrate Bitters. Top with tonic. Garnish with remaining lemon wheel and olives. Enjoy.

For me a non-alcohol drink has to have some sort of bite to it. This gives bitter, sour, sweet, and salty. Not too shabby for 25 calories. Let me know if you make it.
