Great time at the miso making workshop ran by @newlynfermentary with expert info & koji from @robinsherriff @thekojikitchen 😁🙏
.
Lots of information & tastings followed by a hands on workshop to make our own miso! Options to prepare different types but I went for making white miso with the quickest fermentation of ~6 weeks! Was amazing to see how many different varieties & flavours there are to experiment! Although the process is quite straight forward it was good to get the detailed instruction & opportunity to speak with experts in the field! Leaving me confident to go on & experiment myself! 🙏🧡

Cranberry sauce ❤️
.
I brought fresh cranberries, sugar, honey, red wine, white wine, a stick of cinnamon & a single clove to the boil! Then simmered until the mixture was nice & soft. Meanwhile sterilising a jar! It was tangy & tasty!
.
Tip: I added some of my cranberry sauce to make a delicious gravy using gravy granules, red& white wine, herbs & salt! Heated gently & added to my roast! 😍

Elderberry syrup! ❤️
.
Tip great for the cold & flu season! Makes a fab “mulled wine” hot drink when added to hot water 🍷
.
Recipe: Remove the berries from the twigs & rinse. Add to a pan with choice of spices (I like to add cloves, cinnamon, cardamom & ginger which can be fresh or dried). Cover with water & bring to the boil then simmer for around 30 minutes. Mash & allow to cool. Strain through a sieve or cloth into a jug. Add honey. Pour into sterile bottle or jar. When completely cooled store in the fridge ☺️

Love the variety of edible seaweeds by the Mount in Cornwall! ☀️💚
.
TIP rinse the cut seaweed in the rock pools to try & remove as much sand as possible! Saves washing time at home! 🌊🌊🌊🌊

Seaweed foraging near the Mount 💚
.
Seaweed foraging around the UK is amazing & open to beginners! To my knowledge all seaweed at low tide is safe to eat! Of course identify anything before you eat!
.
Tip: bring scissors to trim fresh seaweed so you know it was growing at low tide level. Don’t pick up loose seaweed which may have washed in!

Welcome! 💙
.
Starting my page with one of my fav things foraging in one of my fav places Penzance!
Was a lovely morning walking the dog 🐶
Picking blackberries for dessert later in the day! Also some sloe berries to make into sloe vodka! 🫐☺️
.
Tip: prick each sloe before putting into the bottle! Their skin is quite thick so helps the juices diffuse!
Place in a freezer to pop the berries quickly rather than pricking each individually! 🙏
.
Recipe:
Fill a clean bottle, up to a third of the bottle, with clean & pricked sloe berries & sugar (ratio of ~75g sugar to ~150g sloes, but can be flexible) & top with gin or vodka! Wait until Christmas 🎄 or as long as possible! 😁 drink 🍷
