Corrida Boulder. A Spanish steakhouse experience that has me falling in love with the Boulder dining scene. 🍸

Perched above Pearl Street in downtown Boulder, Corrida Boulder delivers one of those dining experiences that feels polished from the moment you arrive. Spanish-inspired cuisine, sweeping mountain views, beautifully balanced cocktails, and service that is truly unmatched.

🔥The Japanese Wagyu was the standout of the evening. Rich, delicate, and one of the most memorable bites on the menu. The aged ribeye brought deep, beautifully developed flavor, while the tapas were perfect for the table, refined, shareable, and made for lingering over between pours.

The cocktails were equally thoughtful, layered and exceptionally well balanced, and the attention to detail throughout the evening made the entire experience feel effortless.

Every pour, every plate, every bite felt like a little Spanish dream above Boulder.

Still dreaming about this night. 🌾✨

There’s something pretty magical about gathering around a table in the middle of a farm as the sun goes down.

Our evening at Esoterra Culinary Garden was everything we hoped it would be — beautiful food inspired by the garden, incredible wine, cocktails, golden-hour views, and most importantly, a table filled with so many wonderful people. Watching Chef Samuel McCandless create a dinner around what was growing just steps away made the evening that much more special.

To everyone who joined us: thank you for making this night what it was. 🤍

We already can’t wait for more dinners in the fields next year — between the Farmette and Esoterra Culinary Garden, there is so much more to come. 🌱🍷

Brunch weddings are seriously underrated 🥂

This June wedding at Corrida in Boulder was such a good example of why I love when couples do things a little differently. Instead of an afternoon wedding, they chose a brunch wedding and the midday celebration gave the day such a unique vibe.

Bright Colorado sunshine, city scapes and views of the flat irons, cocktails, and insane florals… it truly feels like a day out of a magazine.

Join us on Sunday, August 23 for Plant a Seed for Change and enjoy a dish from Chef Samuel McCandless of Corrida. Tickets are available now through the link in our bio.

Samuel’s relationship with food started far from a professional kitchen. Born and raised in Montana, he spent summers in Redwood City, California, cooking alongside his grandparents. After getting his start at Bistro Enzo in Billings, his career took him into some pretty remarkable kitchens, including Frasca Food and Wine here in Boulder and L2O in Chicago.

Today, Samuel is Chef/Owner of Corrida, where his cooking brings together the traditions of northern Spain and the agriculture of the American West. Corrida has made regenerative ranching central to what it does, sourcing regeneratively raised beef through Corrida Cattle Co. and pairing it with locally grown produce and ingredients from Spain.

We’re proud to count Corrida as one of our Snails of Approval, recognizing its commitment to a food system that’s good, clean, and fair.

After years spent cooking in Boulder, Samuel has a pretty good idea of what makes for a perfect day here. It starts with coffee at Belaza, includes a stop at @dry_storage (another Snail!) for bread made with freshly milled heirloom grains and a chocolate chip cookie, followed by a hike up Anemone Trail and time with his daughter.

We’re excited to have Samuel at Plant a Seed for Change and even more excited for you to taste what he brings to the farm.
