My latest breakfast obsession! 🙌 As a dairy-free eater I hadn't eaten yogurt for over a decade. I didn't realize how much I missed it until I found @harmlessharvest coconut yogurt. It's sooo rich and creamy!

I've been eating it daily with nuts and berries but today I tried warming up the berries first and wow - total elevation to a whole new level!!! 😍😍😍🙌🙌🙌🥰🥰🥰 That "syrup" that will naturally sweeten my yogurt is just from the melted berries. 🫐🍓

What do you eat for breakfast?
Ideally I like to start the day with protein and veggies.
Today I had eggs (duck eggs in my case since I'm sensitive to chicken eggs) with leftover asparagus, zucchini linguini, and sweet potatoes. I'm trying to get more veggies into my diet, and making sure I eat them for breakfast ensures I'm off to a great start. 😃👍

Wake up! Anyone need a little Espresso? ☕️

@nyc0lee I could watch you dance all day! (And lately I've been playing the videos from #MSG and #barclayscenter over and over!)

Thanks @cara.laban for the great close ups from the pit last night in Boston! There's nothing like family 🙌

Proud momma moment! 🙏🙌
My daughter @nyc0lee is dancing for Sabrina Carpenter in her Short and Sweet tour! Here are a few pics from opening night in Columbus, Ohio last night. She's the curly red head. Can't wait to see the show in New York next weekend! 😀

Flatbread made with a quinoa crust! 🙌 Gluten-free, vegan scrumptiousness at its finest!

This yummy quinoa crust is made simply by combining equal amounts of quinoa and water, and allowing that to sit for 2 hours. Then blend in a high speed blender for about a minute until milky. Spread mixture on a parchment lined baking sheet and top with whatever you like to make it flavorful. I like to sprinkle @traderjoes onion salt on top. Today I also added chopped scallions.
Bake for 20 minutes at 400 degrees. Flip crust and bake an additional 10 minutes. Two cups of quinoa and 2 cups filtered water fills one cookie sheet.

Today I used this crust as a base for flatbread. I also have this crust cut up into smaller pieces to toast and have with my eggs or guacamole as the perfect bread or cracker substitute any time.

Toppings today included homemade cashew cheese on the bottom, cooked onions, broccoli, and zucchini along with some lettuce, then a drizzle of balsamic vinegar. 🙌🥰 Such a fun dinner!

Play around with fun ways to use this quinoa crust and let me know what you think.

I want to share my latest snack/breakfast obsession with you. 🙌

I created this Keto Ball recipe a few months ago when I was following a strict ketogenic diet so I had something yummy to grab any time (and I apologize that I just realized I never posted it. As you can see by the fact that I'm wearing a winter sweater in this video and it's now summer 😜).

These balls work as a breakfast or sweet treat any time! (although they are sugar free). A true #guiltfreetreat 🙏🙏🙏

Recipe:
- 1 1/2 cups chopped pecans
- 1/4 cup chopped walnuts
- 1 cup pumpkin seeds
- 3 Tbsp chia seeds
- 2 Tbsp ground flax seeds
- 2 Tbsp ground hemp hearts
- 1 tsp cinnamon
- 1 cup almond butter (the glue that holds it together)
- 1/4 cup Choczero caramel flavoring syrup (a scrumptious sugar free syrup sweetened with monk fruit sweetener) Swap with maple syrup if preferred.
- 1/8 tsp sea salt
- 3 Tbsp melted coconut oil or MCT oil (added to increase healthy fats while doing a ketogenic diet, but not needed if prefer a lower fat version)

Feel free to swap any nuts or nut butter that you prefer. You can't mess these up!

Place all ingredients into a large bowl, mix until well blended. Eat raw 🥰 or roll into small balls and place in the freezer until ready to eat. Enjoy!!! 😋

My version of a yummy Memorial Day BBQ meal. @applegate organic hot dogs and @bubbiespickles on a chopped salad 🥰 Of course I topped it with my homemade creamy Zesty Dijonnaise dressing 🙌. Recipe at crazyforyuca.com.

If you haven't tried pickles on salad yet, you're in for a treat! 😉 @bubbies sauerkraut is also AMAZING in salad!

#yucalovers unite! 🙌🙌🙌

Meeting Daniela from @yubakery.nyc at The Wicked Gluten Free Festival this past weekend was a real treat! As was trying all her outstanding yuca products like crispy, crunchy grain-free yupuffs and Pao de Queso - a scrumptious, warm Brazilian cheese filled yuca bread ball! 🥰

Meeting someone who shares my obsession with yuca is a real thrill for me!

If you're looking to make some healthy swaps in your diet, swapping out some wheat for yuca is a wonderful choice to support gut health by increasing the resistant starch you consume. While wheat is inflammatory to the gut, yuca nourishes the gut with its prebiotic fiber.

Yuca (a.k.a. Cassava) is the best addition to a gluten or grain-free diet to eliminate any sense of deprivation. Yuca and yuca flour can be used to make anything previously made of wheat.

Check out @Yubakery and stock up on fantastic yuca products made with love right here in NY. 😍

This soup!!! 🙌🙌🙌

I haven't posted in a while because my neurologist suggested I try the ketogenic diet to help my body relearn how to effectively burn fat for energy (vs carbs).

How can the person who lives on yuca be told to cut out all carbs, even the healthy ones! 😩 I've had to cut out many things because of food sensitivities over the years, but going keto and actually achieving ketosis on a regular basis has been one of my biggest challenges.

This Cream of Broccoli Soup was a total game changer! Since I eat it almost daily for either breakfast, lunch or dinner I've kicked into optimal ketosis levels, and am rarely at levels below "mild ketosis." 🙏 And it's filling, healthy and scrumptious! You don't need to eat ketogenic to enjoy this soup. It can be part of any healthy diet .

I tweaked the recipe I found in the book Brain Body Diet by saragottfriedmd

Here's the recipe:
-6 cups chicken bone broth (veggie broth can also be used)
-1 can full fat coconut milk
-2 tbsp ghee (can use butter if able to eat dairy). If vegan leave this out. It's still yummy.
-1 large leek-chopped.
-2 or 3 cups organic chopped broccoli
-2 huge handfuls of kale or spinach
-1 1/2 tsp fresh ground pepper
-Trader Joe's onion salt, sea salt, and garlic to taste (I like to use 1-3 tsp of each but I haven't measured. I keep tasting and adding/tweaking as I go).

Directions:
- Place bone broth and coconut milk in a large pot and bring to a boil.
-Add vegetables and spices and cook for about 20 minutes until veggies are tender.
-Blend with an immersion blender or in a food processor.
-Taste and tweak spices to your liking.
Enjoy!!!! 😊
