Diwali or Deepavali is one of the major cultural festivals that is celebrated in Singapore 🪔 To usher in this year’s festival of lights, I baked a gulab jamun cake! 💛

Gulab jamun is a classic Indian sweet which consists of balls made from milk solids soaked in a rose-cardamom syrup.

Wanting a fuss-free dessert for my Diwali dinner, I chanced upon this Gulab Jamun Cake recipe from @sanjana.feasts blog. It was incredibly easy to make — just mix all the ingredients in a bowl and pour into a cake pan! I subbed half of the sugar in the recipe with Lakanto Monk Fruit sweetener to make it a bit less sinful. 😉 Since I absolutely love pistachios, I made sure the top was sprinkled generously with them! ✨

Going a lil’ nuts over dessert today 🌰 Decided to cook a Mediterranean-inspired dinner, so of course dessert had to be in theme as well 🇬🇷

These baklava rolls, also called saragli, were a nice alternative to traditional baklava since you don’t need to spend as much time with the pastry layering.

The rolls are filled with mix of walnuts & pistachios and drizzled with a lemon & orange-infused syrup. 🍋🍊

Make sure that your syrup is cool before pouring it onto the rolls to ensure that the baklava remains crispy 😊 You’ll want to hear it sizzle when the cool syrup hits the hot pastry! taken in Singapore by @crumb.monster

She sells seashells 🐚 A little summer-inspired design for today! 🏖

Back to baking again after a busy month of moving houses & settling in 👩🏻‍🍳💛 It took a while of figuring out new oven settings, bulk fermentation times, and getting my starter to adjust to its new environment 🧫 But excited to bake some more now and try out some new recipes! Hope everyone is having a fab Sunday! ☺️

Scoring video for the previous loaf 🍞✨

Adding a bit of border detail is always a fun way to frame a boule! 😀 When scoring lines or wheat patterns, I try to keep the cuts as narrow and close together as possible 📏 Don’t worry about the angle too much as the lines tend to naturally orient themselves diagonally once the dough expands during baking 🌾 💛

Adding a splash of colour to your weekend! 🌈☀️ Shophouses are one of my favourite landscapes in Singapore and I love how colourful & unique the are. 🧡

This dough was extra poofy after the cold retard, so I opted for a more delicate design with smaller cuts ☺️

This weekend’s sourdough trio ☺️🥖 Swipe for the scoring video! 💛

Went back to basics for these loaves — 2 plain ones & 1 oat porridge sourdough. The dough always feels so nice & smooth whenever I make these pared-down recipes! It makes for an easy-to-handle dough with a supple texture for scoring 👐🏻

It’s been so hot in Singapore lately, and I’ve found that popping the dough into the fridge every now & then has been much more helpful in regulating the dough temperature rather than using the aircon to cool the room 🥵😉

Ain’t nothing that chocolate can’t fix! 🍫

I’ve really been loving the recipes from Claire Saffitz’s @csaffitz Dessert Person book and this flourless chocolate wave cake is another winner! 👩🏻‍🍳 It’s fluffy, not as dense as other flourless cakes, and the crackly top is just 💯❤️

Been on a mini hiatus due to work & family reasons 🙏🏻 But with Singapore back into a pseudo-lockdown, I’m foreseeing more opportunities to bake in the coming weeks! 🥖🥧💛

It’s hot cross bun o’clock! 🌼💐

I used the recipe from the @tivolirdbakery book & it was my first time making hot cross buns at home, so I was quite pleased with the end result! I think I just made the crosses a lil’ bit too thick 😝 But some helpful HXB tidbits I found in the book were:
🐣 - Soak the raisins and sultanas (overnight if possible) to help prevent them from burning on the crust whilst in the oven.
🐣 - Add up to 130g of sourdough dough into the recipe to add more depth & flavour — I used sourdough discard!
🐣 - Instead of the usual apricot jam glaze, mix in equal parts of brown sugar & water, and bring to a boil together with 1 cinnamon stick, 1 star anise & 5 cloves. The spices infuse the glaze with such a nice fragrance and add such a warming flavour to it!
