A superb afternoon with our wonderful software engineers and IT support team here in Goa, these guys do a fantastic job developing software solutions for our major clients in fruit and vegetable production, specialist fruit and vegetable distributors, leading UK Estate Agents and many more industries! A wonderful lunch location in Goa @tajhotels with amazing views and food! Of course I loved the pasta station and tiramisu deserts! 👌👌

Beautiful spaghetti con vongole (clams), plenty of fresh chopped flat parsley and garlic, I also added some lovely fresh cherry tomatoes grown by our good friend Lisa, they are packed with flavor, then to finish these amazing figs from one of my neighbors, thank you Jocelyn, they are absolutely amazing 👌👌

When you have beautiful basil like this, there’s only one thing to do and that’s to make some fresh pesto, traditional method is with a pestle and mortar, however 5 seconds in a nutribullet did it!!

Ingredients:
🔸Fresh Basil 🌿 leaves
🔸Garlic
🔸Extra virgin olive oil
🔸Pine nuts (slightly heated up)
🔸Pecorino cheese
🔸Freshly ground Salt & Pepper
🔸squeeze of lemon juice

I find the casarecce pasta shape works really well with the pesto.

A superb day at @grillandember yesterday with my little bro @giovannivalenza1969, @pomsky_hijinx_and_hiccup, perfecting BBQ skills and more! Beautiful meats from @thomas.joseph.butchery and amazing sea bass, we cooked some beautiful Wagyu Picanha on the Ofyr island unit, great banter with the guys, good football discussions, me and Welsh Dave agreed Italy 🇮🇹 and Wales 🏴󠁧󠁢󠁷󠁬󠁳󠁿 will be back for World Cup 2030 😂
