Cool, clean and dry.

One knife is good. Two knives are gooder!
Plus the second best steak on the animal is the sirloin cap!
Backstrap falls at number 3 for me.
What’s your number 1?

Toward the neck of the backstrap is a group of muscles whose tendons run about 1/5 of the way down the backstrap.
Now you can leave it to make it look bigger🤣 but then your chewing tendon instead of eating backstrap.
Remove that section, clean it up and keep it separate or grind it.
That is going to produce a smaller backstrap toward the neck, but one you enjoy infinitely more!

What about the ‘gland’ buried in the rounds? Well, it’s best to remove it, obviously.
Do so prior to removing the rounds from the bone. It’ll make your butchering easier if the meat is anchored.
Also, it is a wive’s tale that if cut into this ‘gland’ that your meat will taste bad. That is simply not true.
If you cut into the tarsal gland (the dark patch on the lower leg) while field dressing you best clean your knife or change it as that WILL taint your meat.
But the one buried in the rounds is benign.
