Really trying to get it right! Yesterday’s batch didn’t turn out well and I really want to highlight the cacao fruit flavor. I decided to try some organic cane sugar. It’s amazing how big the difference is, it is all really billowy and puffy!!! I didn’t temper these, will definitely do next time! They came out great though.
This chocolate is amazing, it’s not only organic but also certified by HCP to be heirloom, yay!!!
These are great molds, just got them in. They give you the freedom to mold your own bean to bar chocolate, made from scratch. I always use coconut sugar in mine instead of cane sugar. taken in Tucson, Arizona by @cyclingmooncafe

My sisters were making butter tarts, so I jumped in!!!!! Checked out different recipes and did some merges!!! Mmmmm, with walnuts! The pastry turned out amazing!!!

I pulled my small melanger out to make chocolate baking sticks for Pain du Chocolat. This is Guatemala Kampura. I’m creating it at 65% cacao and using coconut sugar. Looking forward to tasting it!

I’m so excited! This is my first time making a sourdough croissant recipe and process! I can’t wait to see how they come out! I had to experiment with Pain de Chocolat using my bean to bar chocolate, looking forward to these!

The sourdough final proofing takes about 13 hours. It takes 4 days to make these. Yay!!!!😀 taken in Tucson, Arizona by @cyclingmooncafe
