Hey everyone happy early Earth Day. My name is Cyrus Nelson, an Arizona resident by choice. I bartend at @batatucson , @barbatatucson , @tlcson , and @reillypizza , and I’ve been in the restaurant industry for a little over a year. I started at Bata as a support staff with my eyes on bartending. Advised by the incredible network of the talent Tucson has to offer, and mentors like @karlgoranowski , I’ve had the opportunity to grow as a bartender and person in a variety of environments.

In order to showcase @suncliffegin , I chose one of my favorite earthy ingredients: the humble beet. Golden beets have a vibrant color and wonderful savory character, backed by balanced sweetness. I juiced local organic golden beets from @blueskyorganicfarms , then clarified the juice and acid adjusted it to similar levels as lemon juice. This lets the beet flavor shine through, without any additional citrus flavors getting in the way of the gin. A small amount of @cocchi1891 Americano alongside vegetal @sotolflordeldesierto amplifies the bitter notes of the gin, the earthy tones of the beet, and ties everything together. A dehydrated golden beet and salted red beet powder garnish further reinforce the earthiness on the nose while providing visual intrigue.

.
Root of the Problem
2 oz Suncliffe Gin
.5 oz Acid Adjusted, Clarified Golden Beet Juice
.5 oz Cocchi Americano
.25 oz Flor Del Desierto Sotol
.25 oz Fennel Flower Infused Honey Syrup (3:1)
Dash Orange Bitters

Expressed Lemon Oils
Large Format Ice Cube Dusted with Salted Red Beet Powder
Garnished with Dehydrated Umami Spritzed Golden Beet Chip

Happy Earth Day to all and a specific thanks to @thechurchillphx , @sofarsogoodphx , and @suncliffegin for sponsoring this event! #suncliffeshowdown by @cyrusnelsonn
