My number one piece of advice for improving your gut health?

Eat 30 plants a week

This number comes from our research with the American Gut Project which showed that the wider diversity of plants you eat, the more diverse your gut microbiome tends to be.

There are few recipes better suited to packing in the plants than a delicious curry and this saag tofu will get you a third of the way there.

I was lucky enough to receive this as a zero-waste takeaway from @dabbadrop but you can also make this plant-packed dish at home, here’s how to do it:

Serves 2

2 Tbsp oil
1 inch peeled and diced ginger
2 minced garlic cloves
3 diced tomatoes
Juice of 1 lemon
1 tsp fennel seeds
½ tsp ground turmeric
1 tsp garam masala
2 tsp coriander seeds
1 tsp chilli powder
100g melon seeds
½ tsp fenugreek seeds
1 finely chopped green chilli
1 chopped onion - chopped
½ tin coconut milk
400ml water
100g fresh spinach
1 x 450g packet firm tofu, cubed.
1 bunch coriander, stems finely chopped
salt, pepper and sugar to taste

Soak the melon seeds in cold water for 30-60 mins
marinate the tofu with oil, salt and your favourite spice mix. Then roast at 180C or pan-fry for 15 mins until golden brown.

In a pot, cook the fresh spinach in a little water. Blend to a paste and set aside.

Make a paste with the melon seeds and water and set aside.

Heat the oil in a pan and add the onion, garlic and ginger. Fry until translucent, then add the chopped coriander stalks and green chilli. Cook until golden and caramelised.

In another pan, dry roast the fennel, fenugreek and coriander seeds. Once fragrant, use a pestle and mortar to grind to a powder. Add the turmeric, garam masala and chilli powder

Add the spice mix to the onions and cook for around 2 mins before adding the chopped tomatoes.

Simmer for 20 mins until the sauce thickens up, then add the water, coconut milk and melon seed paste. Stir to combine then bring to the boil before blending into a smooth gravy.

Finish the sauce with salt, sugar, black pepper and lemon juice then add the blended spinach.

To serve, spoon the gravy over the tofu chunks and serve with your favourite side.

As an Indian living in London, I’m always on the lookout for good Indian restaurants to try… and frankly, I do eat out rather a lot.

But every so often, what I truly crave is simple ghar ka khaana. Unfussy, yet deeply comforting. 🤎

Enter, Dabba Drop.

Modelled on the legendary dabbawalas of Mumbai, this is a freshly cooked, plant-based Indian food delivery service in London with a weekly changing menu. It’s  London’s answer to a proper tiffin service, delivered in a reusable stainless steel dabba. Four tiers, four dishes, one great meal.

I tried their Sunshine menu: cabbage and cavolo poriyal, sweet potato salan, toor moong dal, lemon basmati rice, parantha and chutneys on the side.

All I had to do was heat it up… and dig in.

Restaurant-quality. Tasted like home. Completely plastic-free and eco-friendly. A healthy takeaway in London I could actually feel good about - no guilt, no washing up.

This week, we’ve handed the Dabba over to the brilliant team at @kolamba.ldn, one of London’s most loved modern Sri Lankan restaurants.

Because Sri Lankan rice and curry isn’t one curry. It’s a whole table of dishes built to eat together: something rich, something fiery, something coconutty, something sharp. So that’s exactly what we made 👇

🥔 Ala Thel Dala: fried new potatoes with caramelised onion, curry leaves, mustard seeds, cardamom & green chilli.

🍈 Jackfruit Curry: slow-cooked in coconut milk with curry leaves, cinnamon & lime, finished with crispy onions.

🍲 Parippu: tempered red lentil dal, silky and deep, made for spooning over rice.

🍚 Cardamom Rice: fluffy, fragrant, ready to soak up every last bit of curry.

Four dishes. One seriously good dinner. All you need to do is heat it up.

✨ Don’t skip the Toasted Pol Sambol. Kolamba’s dark toasted coconut with mustard seed, curry leaf, lime & black pepper is standing in for our usual Ginger Jam this week. Nutty, smoky, sharp. Add it to everything.
