Two years ago… I didn’t cook much🙈

Thomas did most of the cooking. I baked, but even that was something I only learned not that long ago.

And neither of us really grew up making homemade food. Definitely not bread, bone broth, or things like that. Our parents cooked, but we didn’t really learn those skills then.

When we decided to stop eating out so much, I had to learn. And I genuinely wanted to.

I learned by watching Thomas and using his recipes ☺️ I handled most of the baking & breakfast items at first, & he mostly handled dinners.

I didn’t learn overnight. And definitely not perfectly. Some meals have been delicious… some not amazing, but we still eat them 😂

I started with baking.
Then bread. (Sourdough then yeasted actually & a mix of both)
Then easy breakfast items (like baked oatmeal & egg baked haha)
And now I make the majority of our dinners.

I love learning how to make things homemade when I can. Sometimes we make homemade marinara. Sometime we buy it. It’s all a balance 🍅

But that’s why we’re here! To encourage you to cook more meals at home. Since we have, we feel better, have more energy, & deal with less bloating. And it’s become a way to teach our kids & connect more around the table.

If you didn’t grow up cooking either, you can learn. We did. And we’re going to keep showing you how ☺️

Not as professionals. Just as 2 parents learning as we go & sharing along the way.

We didn’t stop eating out because of guilt. We stopped because of how we felt 😝

Bloated.
Tired after eating.
Spending way more than we meant to.

And still somehow… not satisfied.

When we moved from the city to the country, we didn’t have as many quick options, so we started cooking more homemade🍔🥗

But here’s the truth. We also realized we didn’t want to depend on takeout anymore.

Thomas already cooked a ton.
But I (Lex) really learned this past year (with a lot of teaching from him 😂).

We didn’t grow up cooking like this. It was self-taught. It wasn’t perfect. & it definitely wasn’t overnight. We’re still learning everyday!

Now we eat out occasionally. But homemade is our normal🥖 & we love finding cleaner product swaps to make life easier!

And we feel so much better.

Daddio really is our last name😉

We’re Lex and Thomas. We’re raising four boys, homeschooling, caring for chickens, & living on a little bit of land.

What many don’t know is that this account started over 10 years ago during a very different season. I (Lex) began sharing my journey through an eating disorder, & so many of you related. That honestly is what first made this space grow. (It was originally called Restoring Radiance, for those who remember)🥹

Fast forward to today, and God has truly made beauty from ashes🙏🏻

This is our go-to beef chili because ALL 4 of my boys eat it 🙌🏼 It’s cozy, easy, & one of those dinners I know everyone will actually eat!

Also one of my fav little kitchen hacks is keeping chopped green peppers from our garden + diced onions in the freezer. It makes throwing together soups and chili SO easy, and honestly you can’t even tell a difference once they’re cooked!💯

I usually make this recipe with red kidney beans, but I was out this time so I used white beans & it worked perfectly!🫘 

Definitely one to add to your fall dinner rotation 🍂

KID-FRIENDLY BEEF CHILI:🌶️
-2 tbsp avocado oil
-1 large yellow onion, diced
-1 green bell pepper, finely diced
-2 lbs ground beef
-2 (15 oz) cans tomato sauce
-2 (15 oz) cans kidney beans, drained
-½ cup bone broth, more if needed
-2 tbsp chili powder
-1 tbsp dried oregano
-1 tbsp cumin
-1½–2 tsp sea salt, to taste
-1½ tsp paprika
-1 tsp black pepper
-1 bay leaf

Directions:
Heat oil in a large pot. Add onion + bell pepper & cook 3–4 min. Add ground beef & seasonings. Cook 5–6 min, until browned. Stir in tomato sauce, kidney beans, bay leaf & broth. Bring to a boil, then reduce heat and simmer 15–20 min. Add more salt to taste. Serve with your favorite toppings! Cheddar, cilantro, Greek yogurt, avocado, etc! by @daddioskitchen

Made this sausage gnocchi soup the other night & it was one of those dinners where everyone actually ate it & the house smelled amazing! One pot for the win🍲 

It’s cozy, filling, super simple, and perfect for these cooler fall nights. Definitely adding this one into the rotation🤎

CREAMY SAUSAGE GNOCCHI SOUP:
Ingredients:
-1 lb Italian sausage
-1 small yellow onion, diced
-2 cloves garlic, minced
-3-4 carrots, peeled & chopped
-3-4 stalks celery, chopped
-1 tsp Italian seasoning
-1 tbsp tomato paste, optional (I prefer without)
-4-5 cups chicken broth
-16 oz potato gnocchi
-1 cup heavy cream
-2 cups spinach or baby kale
-½ cup Parmesan
-Salt + pepper to taste

Directions: 
1. Brown sausage in a large pot. Remove & set aside.
2. Add onion, carrots, & celery & cook until soft. Stir in garlic, Italian seasoning, tomato paste, salt + pepper.
3. Add broth & bring to a simmer. Stir in gnocchi and cook 2–4 min, until tender.
4. Lower heat & stir in heavy cream, spinach & Parmesan. Simmer 1–2 min, until spinach wilts.
5. Taste, add more Parm if you want, and serve! 🤌🏻 by @daddioskitchen

Trying to make our mornings a little easier around here, and these have been such a win🙌🏼

Instead of standing at the stove flipping pancakes while everyone is asking when breakfast is ready😂 I just mix everything up, pour it onto a sheet pan, and let the oven do the work. Cut them into squares and breakfast is done!

I also added collagen for a little extra protein, and the boys obviously don’t care because they just taste like pancakes😂 Today is the last day for the @equipfoods BOGO 40% off sale on their site! Use the code DADDIOS 🤎

Easy Sheet Pan Pancakes:
-2 cups all-purpose flour
-1/4 cup sugar or maple syrup 
-2 scoops @equipfoods collagen
-3 tsp baking powder
-1/2 tsp sea salt
-1¾ cups whole milk
-2 eggs
-¼ cup melted butter
-1 tsp vanilla extract

Mix & let batter rest for about 10-15 min. Pour onto a greased or lined sheet pan, top with whatever you like & bake at 400°F for about 15–20 minutes, or until lightly golden and cooked through.

If you have shredded chicken in the fridge, make these 🌶️ These green chile chicken enchiladas are creamy, cheesy, SO easy, and perfect for a busy weeknight!

GREEN CHILE CHICKEN ENCHILADAS:
Ingredients: 
-3 cups shredded crockpot chicken (about 1lb)
-1 4oz can diced green chiles
-1/3 cup Greek yogurt or sour cream
-1 15oz can green chile enchilada sauce
-1 tsp cumin
-½ tsp garlic powder
-½ tsp sea salt
-8–10 flour tortillas
-1-2 cups shredded Monterey Jack or Mexican blend cheese
-cilantro, for garnish 

Directions: 
1. Mix shredded chicken, green chiles, sour cream, cumin, garlic powder, salt, ½ cup enchilada sauce + 1/2 cup shredded cheese.
2. Spread a little sauce in a greased 9x13. Fill tortillas with chicken mixture, roll & place seam-side down.
3. Pour remaining sauce over top & sprinkle with remaining cheese.
4. Bake at 375°F for 20–25 min, until bubbly. Rest & serve!
