For as long as I can remember I was in a restaurant. Coming home from school, most kids went home. I went to dry storage, doing homework on bags of rice with my sister. Friday nights I played football, after the game all the kids went to the local McDonalds to celebrate, I went to work and helped close down the restaurant. People ask me all the time, what got me into the restaurant business. I giggle because this is all i know! I fucking LOVE what I do!!!! This isn’t a hobby, I didn’t just decide to change careers. This is in my blood. Restaurant and hospitality industry is constantly changing, and you better change with it or you will get left behind. People fear change, which is funny because all of us strive to be different. It only becomes scary when you start second guessing yourself, second guessing decisions, second guessing a dish…Lol. In order to be a pioneer you have to be the first to do it. And that means making many mistakes (lessons) along the way. You’re going to have set backs, or not so friendly feedback, but that comes with it. Have faith in yourself that you will get it right.
