To our guests, and to every person who has been part of the team over the years, whether in the kitchen, the dining room, or the garden: you’ve all left your mark. Thank you for helping define what this place is.

From the beginning, our focus has been to stay close to the land and to the people who care for it. The farmers, fishers, millers, foragers and purveyors we work with are at the heart of everything we do. Their work allows us to present Canadian ingredients in a way that feels to us both honest and refined, rooted in place but constantly evolving.

Being recognized at the top of Canada’s 100 Best Restaurants List means a great deal. It also reminds us how much this land holds, and how much of its story has yet to be told.

We’re proud to keep doing that work here in Niagara. Restaurant Pearl Morissette has become what it is because of the people who believed in it early, and those who continue to support it today.

DAY ONE of FIRECAT Vol. 4 brought different voices, techniques and visions together around the flame.

Three pizza masters. Five chefs. Two bartenders. One fire.

First came Pizza & Dom Pérignon, with Roberto Davanzo of @bobalchimiaspicchi, Anthony Mangieri of @unapizzanapoletana and Michele Pascarella of @napoli_ontheroad.

Then, cocktails by Ago Perrone and Giorgio Bargiani of @theconnaught set the tone for the evening.

And finally, dinner brought together Jessica Rosval of @algattoverdecasamarialuigia, Alberto Gipponi of @dina_ristorante, Daniel Hadida of @restaurant_pearlmorissette, Nicolai Nørregaard of @restaurantkadeau and Himanshu Saini of @tresindstudio. Five chefs, five perspectives, one table around the flame.

Il DAY ONE di FIRECAT Vol. 4 ha riunito attorno alla fiamma voci, tecniche e visioni diverse.

Tre pizzaioli. Cinque chef. Due bartender. Un solo fuoco.

Prima, Pizza & Dom Pérignon, insieme a Roberto Davanzo di @bobalchimiaspicchi, Anthony Mangieri di @unapizzanapoletana e Michele Pascarella di @napoli_ontheroad.

Poi, i cocktail di Ago Perrone e Giorgio Bargiani di @theconnaught hanno dato il ritmo alla serata.

Infine, la cena ha riunito Jessica Rosval di @algattoverdecasamarialuigia, Alberto Gipponi di @dina_ristorante, Daniel Hadida di @restaurant_pearlmorissette, Nicolai Nørregaard di @restaurantkadeau e Himanshu Saini di @tresindstudio. Cinque chef, cinque prospettive, un’unica tavola attorno alla fiamma.

@bar_ape , da Toronto, arriva a Udine insieme a @restaurant_pearlmorissette di Jordan Station con un’idea di gelato che prende una strada tutta sua.
Maple syrup, gooseberry, spicebush, pino e altre materie prime canadesi diventano gusti imprevedibili, intensi, lontani dalle combinazioni che ci aspetteremmo di trovare in una gelateria.
Un incontro tra ricerca, istinto e ingredienti fuori dagli schemi. Perché il gelato, quando passa dalle mani giuste, può essere molto più di quello che immaginiamo.

Da una parte il Perù di @pialeonkjolle , un Paese verticale e sorprendente, che custodisce una delle biodiversità più straordinarie del pianeta.
Dall’altra il Canada di @_eric.robertson_ e @daniel_hadida_ , con una cucina legata alla propria terra e a un paesaggio immenso, selvaggio, ancora capace di dettare il ritmo alle stagioni.
Due mondi accomunati da una stessa idea: il territorio non solo come un luogo da raccontare, ma qualcosa da esplorare, conoscere e portare nel piatto.
È proprio qui che nasce il ponte, non per cancellare le differenze, ma per creare un passaggio tra due culture che hanno scelto di guardare alla natura come fonte inesauribile di identità e ispirazione.
Dal Perù al Canada, passando idealmente sopra le acque del Niagara: una tavola diventa il punto d’incontro tra due terre istintive.

Da una parte Pearl Morissette, con @daniel_hadida_ ed @_eric.robertson_ , due stelle Michelin e una delle realtà che stanno definendo la nuova identità gastronomica del Canada.
Dall’altra Bali, l’isola paradisiaca dove @willtgoldfarb con Room4Dessert ha costruito il suo mondo e dove ha trovato un luogo capace di alimentare la sua idea di cucina.
Una cena dall’accento anglosassone, attraversata da suggestioni esotiche, ma anche un’occasione per scoprire un lato inedito di Will Goldfarb: conosciuto come uno dei grandi maestri della pasticceria contemporanea, questa volta si misurerà con il salato.

@restaurant_pearlmorissette hosts an annual garden party that unites the best of the best in the name of a good cause.

This year was no exception and featured an elite line up in support of @gilliansplace_sc

Incredible food, drinks, and an atmosphere that was fun, even with the rain.

Hopefully the dunk tank returns in 2027.
