My debut cookbook ‘La Trattoria - Intuitive Italian Cooking’ is out today!

It tells the story of growing up in a trattoria, building one, finding the Italy I left as a child via the kitchen, migration and much more. 2 years (and a lifetime) in the making, this is a tribute to Italian restaurants around the world and the communities within them. 75 recipes that span three generations of hospitality, developed in my restaurant Tiella, brought to the home for you.

This is for the restaurant kids, the chefs and FOH superstars that raised me, those who grew up far from their heritage. For my mamma, Maria Pia de Razza, whose celebrated trattoria set the standard. Having our books side by side in Tiella is more than I can express.

Much like restaurants, books are a collaborative effort. Thank you to @stephaniejoandrake for commissioning the book and giving me this opportunity! I have news! My debut cookbook ‘La Trattoria’ is out on July 9th.

It’s a story about being raised in my family’s trattoria, the intimate truth about restaurants and all the ups and downs. It’s about life as a diasporic Italian, memory, what happens to identity when you move around the world; and the way food is the ultimate anchor. It’s the story of both Maria Pia’s, and my own @tiella_trattoria

There are 75 recipes along with incredible photography by @scaitboard which we shot over the course of 6 months both in Italia and here in London.

These recipes go back generations, where they’ve been served in our restaurants over the years. I meticulously retested them for you in my home kitchen, sharing the family secrets that are the foundation of Tiella, as well as the tools to help you to think, move and cook like a chef.

My dad @artigianoimports is finally at Tiella! We sat down and ate together Thursday night and wow was it special and emotional. That’s his portrait on the right of the bar when you first enter the restaurant. All night he kept saying “it’s exactly like Maria Pia’s” (him and my mamma’s restaurant, in the picture). There’d be no Tiella without dad! He’ll be here for the week probably pouring your wine and helping us in the kitchen. Yesterday he said “what time does my shift start tomorrow” ❤️❤️❤️ by @dara.klein

Notes from the pass - “Dom, please go to table 6 and see if you can hold the baby for her, the mamma’s not been able to eat her lunch. Just bounce the baby around the restaurant and bring him to the pass for a bit”
