If you know me, you know I love rum and a good cause. @cote_nyc we’ll be serving Jungle Bird’s (in honor of our family @junglebirdbar) where proceeds will be donated to @wckitchen to help those affected by Hurricane Fiona in Puerto Rico.

If you’ve ever been to Puerto Rico you know how special it is and I’m humbled to be able to give back to a place that’s been so good to me.

Although my tenure @themodernnyc has come to an end, I’m forever grateful for this once in a lifetime opportunity to collaborate with the @themuseumofmodernart for the Henri Matisse ‘The Red Studio’ exhibition.

This drink is a culmination of all of my bartending experience coming together and marks a new chapter and ethos of my professional career making drinks.

During my tenure @grandarmybar with @damonboelte @mister_biggins and @thevodkaartist we did very little prep and utilized a lot of fortified and aromatized wines to create complexity. No one off ingredients; everything had to be a workhorse and most importantly accessible.

During my tenure at The Polynesian with @thetropicalogist I learned the importance of garnishing and making drinks that are visually stunning; drinks that when they go through the room people see them and go, "What's that drink? Can I have one of those?"

Lastly during my tenure @themodernnyc I was very much inspired by the 'Eggs on Eggs on Eggs' (it consists of fried egg sauce, poached egg yolk, caviar, brioche, pickled shallots, dill fronds and dill oil) dish and ethos of The Modern where I saw the same flavor being layered via multiple applications of a singular ingredient.

In the Bloodhound Sour this presents itself as strawberry, vermouth with notes of strawberry, and berry powder; effectively layering the berry flavor three ways.
