Come on out to @southobrewingco this Saturday to get the best Oktoberfest food in the county!

To celebrate the release of Grimm the schwarzbier, I'm adding käsekrainer, knoblauchwurst (garlic bratwurst), and frikadellen!

These will be available alongside my crowd favorite schnitzel and roast chicken.

As much as I love my service nights, I really dig the day after where I get to chill a bit and clean up. There's a couple standards in the industry...

One is that the quality of a chef is reflected in how his griddle looks.

Made some beef stroganoff on a rösti to relax today, replaced the common sour cream with creme fraiche and it ended up much nicer. That could be that I'm using 40% butterfat cream to make my creme fraiche...

Go Beaver. That sweet hot mustard is the best on the US market. Hands down. by @daveeloso

A little recipe testing tonight. Cinnamon and ginger coffee cake.

Just a touch of ginger in it to round out the butteriness of the cake itself.

Who even knows where I was looking.

Dialing in my roast chicken, known as wiesn hendl, for my traditional Oktoberfest menu that I'll be offering Saturday, Sept 19th at @southobrewingco

Roast chicken is about as traditional as it gets for Oktoberfest, and I'm pairing it with German potato salad, as well as weinkraut (kraut cooked in wine) and rottkraut (a modern take on the classic red cabbage kraut).

Kyle at South O is brewing some amazing beers, so get your formal sandals on and come on down.
