For the past 14 years, our Deckman’s-style quail have been prepared from Chef Drew Deckman’s original recipe, using quail raised especially for us, with two additional weeks of feeding to achieve their signature tenderness, flavor, and juiciness.

Every plate reflects the relationships we’ve built with our local producers, our commitment to sustainability, and the philosophy that has defined Rancho Mogor from the very beginning.

Early in his career, Chef Drew Deckman spent over a decade in Europe learning, growing and developing his craft under chefs like Paul Bocuse, Jacques Maximin, and Madeleine Kamman.

He was a leader on the team at Restaurant Vitus when it earned a Michelin Star in 2000 which shaped the way he approaches kitchens today.
