Apparently the boxes of Roses are on the shop floors, so it’s time to start taking Christmas party bookings.
It’ll be a more intimate affair at dela this year. We won’t be packing the room or rushing through the season — instead, something a little smaller, slower, more considered and a little less frazzled.

‘You’re living the dream…’

or so says every single person who has dropped in to say hello, to give us a hand or being just a little bit noisy. Even had a couple of Jehovah’s Witnesses try and save me on one extremely hot summers day when the tomato tunnel had reached 40+ degrees C - I think they were taken aback by my willingness to leave said tunnel and sit in the shade with them for 5 mins. My stock answer by the way is that I’m certainly living someones dream - not quite sure if its mine as yet.

We’re heading into Growing Season 10 - having successfully self taught ourselves (always having the amazing Dermot Carey in the background) to ‘farm’. I question my sanity every January whilst waiting for the temperature to heat up just a little to allow me to start sowing under light and over heat in the nursery area of our first tunnel. The amount of (person) hours needed to grow chemical free (we are not allowed to use the word ‘organic’) on a commercial scale I can never reveal as it does not make sense once you take out the calculator at the end of the year. But…there is something about the routine, the summation of 100s of little sequential tasks, the birds singing, the silence, the solitude, the manic of harvest day, the help from and spending time with the family, the fresh air, the sunshine, the exhaustion and satisfaction of doing something ancient, something passed down and something worthwhile.

We have gone from a couple of raised beds bringing in some token herbs and leaves to a proper little farm and roastery, producing €100k annually worth of produce for our restaurant with less than skeleton crew for most of that time.

2025 - we need to grow more volume of less variety. This is what we say every year but theres always a crazy black heirloom tomato, a super high yielding 2 tone courgette or yet another uber hot chilli pepper to try.

So, with sowing season imminent we’ll give it another go - Connemara Padron Peppers are the first seed to be sown in a short few weeks. We have a couple of ideas floating about for our little blue zone - hopefully some will come to fruition this year. by @delarestaurant

We’ve always been a little envious of the overwintering experts—those growers who plan ahead and have beautiful leaves ready while the rest of us are still eyeing up seed packets. 🌱

This year, we’re giving it a proper go and making the most of our two giant tunnels, starting with some radicchio.

There’s a bit of learning ahead, but the hope is to bring colour, crunch and that lovely bitterness to our early spring menus. A little work now for something worth waiting for.

We’ll keep you posted on how it grows by @delarestaurant

Whilst turning over some summer beds in prep for collard greens et al, and ruminating over the intricacies of dialling in the perfect cup of coffee, @claudioschianodicola turns to me and asks if I’d seen that we’d been shortlisted for @businessposthq Casual Dining Restaurant of the Year.

And, to be honest, only for him saying it, it would have passed us by.

Not only that, but @the_mad_march_hare has been similarly & deservedly feted in the Best Chef category.

Not a bad Monday.

Threatening to do this for a bit - 1/2 kg bags of our own cherry tomatoes & Padron Peppers available in the lobby for purchase. Picked an hour ago so will be a flavor bomb addition to your weekend. Also - bags of our own roasted coffee, whole bean mundo novo - roasted on Tuesday this week so will be in its prime after this weekend.
