Salted Rosemary Rye Shortbread

I’m so pleased with how this cookie turned out - especially for a first crack at the idea. 

It’s salty, but sweet. Wholesome, yet buttery. It’s my favourite kind of cookie - decidedly dessert, but with an unexpected savoury edge that makes it all the more addictive. ✨

I imagine it would be delicious paired with a bit of really nice dark chocolate, or maybe even some cheese. 🧀🐭

Hojicha Brown Sugar Rye Shortbread with Hojicha Maple Glaze

#14 of 24 Cookies in 2024

I’m really thrilled about how this cookie turned out. @snax.nguyen introduced me to hojicha powder a couple of years ago and I’ve grown to love it. I find it much more appealing than matcha, with its roasted flavour and moody colour. The powder I used in these cookies is from @hojicha.co and it is delicious!

I tested many versions of this cookie. Different shapes, different sizes, and many different types of sugar on top. Eventually I landed on a version with a maple hojicha glaze and it works so well. Doubling down on the hojicha ensures its flavour is at the forefront and the bitterness of the tea powder helps to prevent the glaze from reading too sweet.

I had a lot of fun developing this cookie and I’m quite excited for its debut in my next snack pack! ✨

Oven-Roasted Tiny Tomatoes

If you haven’t ever roasted tiny tomatoes, you simply must. It takes patience, but it couldn’t be simpler! These would be stellar on focaccia!!

Method:
Cut your tiny tomatoes in half. Arrange on a parchment-lined sheet pan, then drizzle lightly with olive oil. Sprinkle with salt, but don’t go overboard (the flavours intensify as the tomatoes roast and dry out). Roast at 225°F for 2.5-3 hours, or until your desired level of wrinkly is reached. Store in the fridge.

Asparagus Bacon Quiche

I haven’t baked anything new in forever because I haven’t been well. Yesterday I saw pie dough in my freezer that I had saved from Thanksgiving and thought I should use it. It had been eight months and the hard part was already done.

I had a bunch of local asparagus, a bit of bacon, some green onions and parm. It was a delightful combination. Below is the recipe I used for the filling. It filled a 9-inch (fully baked!) pie crust that was fairly deep. I’d use it again.

Custard Base:
4 large eggs
1/2 cup whipping cream
1 cup whole milk
1/8 tsp garlic powder
1/4 tsp dried dill
small pile of microplaned parm
salt and pepper

Other Stuff (in order of how I layered it)
more parm
half a bunch of scallions
10 spears roasted asparagus, cut into 1.5-inch pieces
4 pieces cooked bacon, crumbled 
(pour in filling)

For a first crack at quiche, I think it was great! Baked it at 350 for probably about half an hour? Until it was set with a slight jiggle in the middle. Did not let it cool long enough. Next time I’ll let it cool for a while… like, 2 hours.

Gingerbread Cut-Outs with Royal Icing c/o @marthastewart (cookies) and @hanielas (icing)

A yearly tradition and a true labour of love - decorating gingerbread with royal icing and sprinkles!

I didn’t get time to tackle royal icing before Christmas, but I had extra gingerbread dough and so I baked off more cookies and had a crafternoon icing cookies on Boxing Day.

I think they turned out pretty darn cute, don’t you?

Christmas Cookies 2025

This year brought with it some unexpected challenges and baking wasn’t always top of mind for me. I usually plan out my holiday baking well in advance, but this year I was definitely winging it! Worked out mostly okay and when it didn’t, it served as exposure therapy. 🙃

Seedy Zucchini Cake adapted from a recipe in @yossyarefi’s Snacking Cakes

I’ve made a lot of cakes from this book and this is by far one of the best! I did make some changes, but it’s essentially the same cake and it’s very delicious! I swapped out whole wheat flour for spelt and added some fresh grated nutmeg along with the cinnamon. I also upped the salt to 1 tsp and added a small splash of vanilla.

The cake is super moist and has an amazing texture from 2/3 of your seed mixture being folded into the batter. I used a mix of equal parts sesame, poppy and flax, which was perfect, but I’d take the time to toast my sesame seeds for V2. They didn’t take on much colour in the oven and it’s a lost opportunity to build in flavour!

I may also remove the nutmeg and lemon zest and lean into sesame. A bit of toasted sesame oil in the cake and a tahini glaze drizzled over top? Yes pls!

Plum Almond Cake c/o @davidleite via Leite’s Culinaria

Last weekend, while mourning the loss of summer, I bought a lot of plums. After a galette and two batches of jam, I still had a lot of plums. I sifted through the internet looking for a simple plum cake and this one caught my eye. No softened butter (win) and almond flour (yum). It also called for half and half cream and a crunchy nut topping - I’m in!

I doubted myself a few times… first when I altered the topping (I used chopped almonds, rather than sliced, and melted the butter by accident). I then thought the batter looked suspiciously thin and worried I’d made an error. Lastly, I was convinced I had overbaked her, as the sides got quite dark. But as it turned out, she was fine! A great success, actually! Flavourful and moist, she’s a cake that passes the craveability test. I much prefer this recipe to the famous NYT plum torte, but y’all know that already. 🙃 

If you would like to give it a go, note that I used 140g flour, a 50/50 mix of whole milk and 10% cream, and grapeseed oil.

Black Cocoa and Cardamom Shortbread adapted from @jillian.barreca’s recipe

I’ve been trying to nail the proportions for a black cocoa shortbread and I’m very much still working on it. Too much cocoa can dry out your dough and black cocoa is especially tricky, as it contains very little fat. The result in a shortbread can be an unpleasant, dry texture - the opposite of the melt-in-your-mouth, buttery cookie one might expect. 

So why use black cocoa at all? For one, it has a striking colour (black… my favourite). Secondly, it makes everything taste like Oreos. If you’re in Canada, you can buy it @bulkbarnfoods and if you are in the US, @kingarthurbaking is a great choice!

Last Christmas I made black cocoa shortbread and didn’t measure anything and it just WORKED, now I’m actually trying and it’s a struggle. I’ll get it eventually, but until then, enjoy this stamped beauty! I used a @nordicwareusa cookie stamp to achieve the pattern. ⚡️⚡️⚡️

New Potato Tart with marscapone, Parmesan, fresh rosemary and olive oil

I almost stopped believin’ that proper hydration in pie crust was within reach, but @guillaume.go1 kindly showed me the way! Check out the flake on this weeknight beauty!

I hadn’t made a potato tart before and didn’t research anything ahead of time, so I’ll make sure to blanch my slices next time to ensure optimal texture. My choice of toppings was the result of using what we had on hand, but I loosely followed a @donna.hay recipe I found online!

Looking forward to more adventures in dough come fall!

First jam of the summer! Last month I picked some sour cherries @hildrethfarm, then combined them with some apricots (also from Hildreth!) to make one of my all-time favourites! I like this use of sour cherries, as it doesn’t use many (they’re expensive and labour-intensive to pit!), but you still get all the lovely colour and acidity they offer. The colour of the finished jam is SO gorgeous - a bright orangey-red! Ratios are below, if you would like to make it yourself. I used @camillawynne’s method in Jam Bake for cooking and canning! :)

Apricot and Sour Cherry Jam w/vanilla bean

70% (770g) apricots
30% (330g) sour cherries
55% ( 605g) sugar
60ml lemon juice
half a vanilla bean, scraped

Yield: 4-5 250ml jars
