Been challenging myself to write something every day, some I will share here ✨.

This is actually a first of me sharing a reel of original music with singing :o. Hope you like it!

This one is dedicated to all those who suffer in silence and/or visibly, you are not alone 💜. Sending you all so much love 💜💜💜

Let me know what you think below 🙏🏻🌻✨

Lyrics:

"Sometimes hurting is all you know
Keep paving forward, nowhere to go
Standing on the sidelines, life passing by
Feeling like you can't fight, the tears you cry

But when you call
I will be there
When you fall
I will be there
Life get's messy and hard I know
I will be there
Together we'll get through it all
I will be there"

So I hesitated if I should share because I have only been playing the harp for a little while (actual playing a little over a month now probably :p). But even though it is far from perfect, I figured some of you might still like it and/or find comfort in it 💕.

When I went through something traumatic last year I knew I had to do something to deal with the PTSS. I have had bad bouts of PTSS before from multiple trauma's (referring here to the more life/death, single impact type of events), and multiple rounds of EMDR which was the worst for my nervous system but also necessary at the time. However this time I wanted to do it differently.

I doubled down on what I know works for me. I went into the @medicalmedium information again and did brainshots and supplements, I did energy healings and I decided to learn a new instrument to create new pathways in my brain. After a brief but clumsy flirtation with the violin I suddenly remembered the harp, the instrument I always wanted to play as a child. It wasn't a possibility then but it is now, so I went to the shop and fell in love with her.

I had this song in my head and I felt it would be perfect for the harp. I thought I might need a year or more of practise to be able to play it, but I actually managed to my own surprise within weeks. Something just *clicked* with this harp. The first months after the traumatic event, some days all I could do was play for ten minutes or even only tune her, so I could play the next day. It kept me going and motivated to get out of bed each day.

One day in December I was still hurting so much (mostly in my soul), when I went to a concert in church and prayed for healing through the music. Something miraculous happened and I felt the presence of God, or what I like to call Unconditional Love in every cell of my being. It was eye opening, life altering, soothing and reassuring. The traumawounds healed almost instantaniously and my healing really excelerated after that. It taught me a lot of things but mostly 1. Never underestimate the power of prayer, and also 2. Never underestimate the healing power of music ✨🎶

In honor of international dogs day (yes I am a day late:p) hereby a post on all the beautiful lesson my dog Xut embodies 🐶

💜 Be thankful every day for what you have and what you get. Every day Xut receives (a variation of the same) food, and every day his happiness goes through the roof seeing his bowl getting filled up 🐶

💜 Let the people you care about know that you love them. Xut has to great everyone with lots of tail waggles and happiness, it allways fills the room with joy. There will be no mistake he is happy to be around you🥰

💜 Every stranger is a friend you haven't met yet. Xut truly sees the good in all people. He also feels very responsible for everyone in his vicinity. It doens't matter who you are, if you are near him, he will love on you and protect you and make sure you feel included in the pack🌻

💜 Never let rejection get in the way of trying if you really want something. As stated above Xut loves making friends but not everybody wants to pet or interact with him on a walk. Some ignore him, some walk with a bow around him, yet it never makes him dim his light. He understands that it says nothing about the next person, so he always remains hopeful that the next person is wanting to receive his love and cuddles 💕

💜 Having special needs doesn't make you less lovable. I used to feel this way about myself in the past so this was the biggest lesson for me. Because of his past Xut is not a dog you can just leave alone in the house as of now, which is not necessarily easy. But it doens't make him any less lovable at all. He has so much love to give and I think his past has also given him much wisdom and understanding. He is very sensitive and never judged me when I needed to be in bed whole days, he would just come and lay with me. We are a team and we help each other with whatever we need and that is okay 🐶💜.

💜 He taught me to live with a wide open heart. Xut generally gives so much love that I can feel my own heart expanding whenever he is around 🌻

💜🐶 In summary, Love fully, don't let rejection stop you, be grateful for what you have every single day & light up this world by being your unique self. Oh, and have fun ;) by @dimphyjane

In the western world, we tend to tie (self) worth to something. It can be an achievement, a job, athletic ability, relationship status, owning a car or house, etc. It's no surprise when you ask someone who they are, they often start describing their job, we identify heavily by what we do.

But then what happens when we become ill? We can quite easily become stripped of our sense of self worth. Because who are we without a job, without good health, etc. Who are we when we need help?

And it's not just your own perception that might take a hit. Unfortunately, because most people are so heavily focussed on visible achievements to measure worth and succes, they can say or do things that oftentimes unknowingly contribute to this feeling of not being enough.

So I am here to share this message today, and it is an important one: your worth is innate. You don't have to do anything to achieve it, to deserve it. It has been yours from the beginning of time and will be with you when you leave. You are invaluable, a little radar operating in the vastly complicated majestic systems that is this universe. You are more than enough, always 💜.

Springroll with spicy sauces 🌶

This recipe has been my absolute favorite lately! Not only does it taste amazing, but it's a fun way to get more leafy greens and raw vegetables in. For the veggies you can use what you have on hand or the raw veggies you like. I will give some suggestions and tell you what I used this time. The secret though is all in the sauces ;).

What you need:

For the springrolls:
🌱About 12 sheets of ricepaper
🌱100 grams of lettuce (little gem works well but I used leafy green mix and it worked fine too)
🌱150 grams of shredded carrot
🌱80 grams of sprouts
🌱1 bellpepper finely sliced or 3 tomatoes deseeded and finely sliced into strips
🌱Half a cucumber shredded or finely sliced
🌱A bunch of cilantro chopped
🌱Spring Union, quartered and cut in half

The nutty Sauce:

🍀2 tablespoons nut butter of choice (I used almond/cashew butter)
🍀2 tablespoons maple syrup or to taste
🍀 Juice of one tiny lime
🍀 Finely minced garlic
🍀 Finely minced Red pepper or spicy addition of choice
🍀 a half inch to an inch of grated ginger
🍀Pepper to taste & salt if using

The spicy sauce

🌵1 tbsp limejuice
🌵2 tbsp maple syrup
🌵0.5 tbsp coconut aminos (optional)
🌵1 finely diced spicy red pepper, or 1 tsp chilipaste.

👩🏻‍🌾To assemble the springrolls wet both sides of the ricepaper with water and place onto a plate (to make this process quicker I used 3 plates so I could fill 3 springrolls at the time). Take a bit of lettuce and place in the middle. Place a bit of all the ingredients on top and stretch them all out evenly in the middle of the sheet. Take on side and fold it over the filling, then roll it like a sushi. Fold edges and repeat the process until all are done.

For the sauces put all the ingredients together and stir until well combined. Set aside.

To eat I like to use two little spoons to ladle a bit of the spicy and a bit of the nutty sauce onto every bite I am taking. But of course you can dip as well if you prefer :). Eat them however you like and enjoy! by @dimphyjane

My go to tomato/spinach pasta. This recipe is so easy to make and comes together in minutes!

For this recipe you will need:

🌱Pasta (I used lentil pasta)
🌱Spinach (around 100 grams per person)
🌱Mini tomatoes (100 to 200 grams per person)
🌱Cashewsauce
Optional artichokes hearts

🌱Sundried tomatoes & pine nuts for decoration & flavour
🌱Pepper and salt to taste

👩‍🌾Preparation:

Cook the pasta according to the package. Put a light sprinkling of salt on the mini tomatoes and put them in the over for around 10-12 minutes on 180° (they will turn delicious but will also be like hot lava bombs, so be careful when eating 😉). Make the cashew sauce.

For the Cashewsauce:

🍀 150 grams cashewnuts (grinded in a coffee bean grinder or soaked overnight so they can be mixed to a creamy texture).
🍀1 tablespoon maple syrup
🍀 juice of half a lemon
🍀 approx 50ml water or until desired consistency
🍀 salt & pepper to taste
🍀 garlic clove

Mix everything together, substitute almond milk for water for creamer consistency. This amount of sauce will be good for 2 to 4 servings of pasta depending on taste.

When pasta is fully cooked, stir in spinach to let slink lightly (us a big pan if you can so the kitchen will be less of a mess after 😉). Add tomatoes and cashewsauce, and some chopped artichoke hearts if using, and stir.

Transfer portions to a plate and serve with some pine nuts, chopped sundries tomatoes and some fresh black pepper to taste. Enjoy! by @dimphyjane

This salad has become one of my absolute staples. It's one of those meals I can have over and over again, and I still keep enjoying it. This is one of those dishes you can make as simple or as complicated as you desire. You can vary with toppings, kinds of lettuce, sprouts, anything you would like. I always put potato, jackfruit and leafy greens, but the rest changes :p.

Curried jackfruit:
🌱Jar of jackfruit
🌱2-4 tbsp cashewsauce
🌱.5 tbsp mild currypowder
🌱.5 tbsp spicy curry powder
🌱Tsp paprikapowder
🌱Dash of cayenne and/or spicy paprika

Salad
🍀Potatoes
🍀100-200 grams of spinach or leafy green mix
Optional:
Tomatoes
Sprouts
Pine nuts
Cilantro

👩🏻‍🌾Preparation:

Start by washing and cutting the potatoes into dices/slices. Place on baking sheet and bake on 185° for 30 minutes or until slightly goldenbrown.

Put the cashewsauce with spices together and mix well. Rinse the jackfruit and put in foodprocessor. Pulse 6-8 times very very briefly to chop into shredded pieces (can do this by hand or with a knife too). Stil the jackfruit in with the sauce until everything is fully coated.

To assemble, place bed of leafy greens onto plate and add tomatoes and sprouts if using. Put some spoonfuls of the jackfruit mixture all over the plate and top with the baked potatoes. Finish with salt & pepper, and sprinkle with some pine nuts or cilantro if using. Enjoy!

🌟 For a variation you can also bake the jackfruit into the over for 10-15 minutes. This will give a different flavor and more toasted nutty flavor by @dimphyjane

Asperagus & potatoes

If there is one meal that can be both incredibly healthy and super low effort it would be this dish. The asperagus are a true super food for the liver and the gut especially, while the potatoes nurish and contain virus fighting compounds like L-lysine. Sometimes it is possible to get pre pealed asperagus (& prepeeled potatoes 🙃). This is an option for when you have very little energy/time but still want to eat well. Let's get into it.

You will need:
🌱Asperagus (about 400 grams peeled per person)
🌱Potatoes (around 450 grams pp)
🌱Cashewsaus (see recipe on page).
🌱Pepper & salt

For toppings you can use to you liking; spring union, avocado, pine nuts or (my favorite) chopped pistachio's.

👩🏻‍🌾 to prepare:

Wash (and/or peel) potato's. Dice into cubes or cut into bigger chunks or wedges, depending on the shape and size you prefer. Put on a baking tray on parchment paper and put in the oven at 180° for 20 to 40 minutes, until slightly goldbrown

Peel the asperagus if needed. Place in steamer and steam for 20 minutes.

Assemble the dish. Put steamed asperagus on a plate, and put the baked potatoes next to them. Put a generous spoonful of cashewsauce over the asperagus, don't worry if the cashewsaus seems a bit firm, it will melt a bit like butter onto the asperagus when they are still warm. Put an extra spoonfull of cashewsauce next to the potatoes. For variation you can also use the version with curryspices for this.

Lastly sprinkle the spring onion, pine nuts or chopped pistachio's on top and enjoy! by @dimphyjane

Green pea(ce) pasta

This pasta is a beautiful vibrant green nutritious pasta that comes together in just minutes! You can choose veggies that cook the same amount of time as the pasta so they can all cook together in one pot. The sauce can be prepped while the rest is cooking, meaning this dish can come together in under ten minutes! It is packed with flavor and protein.

The ingredients (serves 2)

The sauce:
🌱200 grams spinach
🌱1 avocado
🌱2 tbsp cashewsauce or 2 teaspoons cashews with a dash of Maplesyrup and a squeeze of lemon juice
🌱Salt & pepper to taste
Optional: garlic clove

Add later:
🌱1 onion diced
🌱Chopped or flaked sundried tomato

In the pan:
Gf pasta like lentil or pea pasta
Green veggies such as green asparagus, green peas or zucchini

👩🏻‍🌾To make:

Boil water and chop the veggies to go in the pastawater like asparagus into bite size pieces. To the boiling water add the pasta, peas and asparagus, set the timer and cook according to package.

Put the spinach, avocado and cashewsauce (or loose cashew, maple and lemonjuice) into a blender with some pepper and salt to taste and optionally a garlic clove. It might need a tiny amount of water to get going. Mix the sauce.

Finely chop an onion and add the onion with sundried tomato flakes or pieces to the sauce. Stir to combine.

Drain the pasta and veggies and mix in the sauce. Optionally sprinkle over some extra sundried tomatoes or pine nuts. Enjoy! by @dimphyjane

This sauce deserves it's own post. This has been such a staple in our household as it goes with almost anything. On a potatopizza? Yes! On a cracker with some tomato and basil? Yes! With baked potato and asparagus? Well, yes 😋.

You will see during the coming week I use this recipe quite a lot as a base sauce. When I am strapped for time and energy I usually make a bigger batch of this sauce in advance to last me a whole week. This saves me a lot of time and also helps me to whip up something like the curried jackfruit fast whenever I get visitors or just fancy eating something savory without harmful oils or additives. So without further ado, here is the recipe:

🌱150 grams cashewnuts (grinded in a coffee bean grinder or soaked overnight so they can be mixed to a creamy texture) or cashew meal.

🌱1 tablespoon maple syrup

🌱Juice of half a lemon

🌱Approx 50ml water or until desired consistency

🌱Salt & pepper to taste

🌱Garlic clove

Mix everything together with a mixer or blender. Add water until desired consistency is reached. Keep in mind that it will thicken up in the fridge because the cashews will keep absorbing the water, so sometimes you might need to stir a little water back in after a few days. Depending how well you store it, it can keep well for up to a week.

🌟 For an easy and delicious twist add about a tbsp of spicy curry powder and half a tbsp of mild curry powder. This makes a delicious paring with baked potatoes and the base of my curried jackfruit recipe.

Enjoy! by @dimphyjane

This week I will be sharing some of my easiest and favorite plant based recipes, to celebrate my four years of being plantbased this month 🌱.

4 years ago I was so fed up with being ill. I was spending most of my time alone in bed or on the couch and I had been for years. I had lost most of my "friends", could barely walk to the bathroom and back, and I was always extremely fatigued and in pain. I had 12 specialists/doctors I saw on the regular, I frequented the hospital a LOT and the diagnoses kept piling up (POTS, hashimoto's, HS, IBS, PCOS, and many more). When I started reading the @medicalmedium books I knew I had finally found answers. I started juicing celery, started eating mostly fruits and veggies, and saw my life change dramatically.

It has been a road with many ups and downs, but this lifestyle has given me so much. Way less pain, way more energy, a clearer mind.. But it also helped to open up my spiritual awareness, opening me up to my intuitive gifts, to more compassion, more kindness, more discernment 💜.

This diet has been the foundation of me, building my life back up. The earth provides us with a bounty of many healing foods and herbs and I am super grateful to MM and SoC for connecting me back to that truth.

Over the years I have received many messages asking for delicious, healthy and simple wfpb recipes, which is why I decided to share some of my staples this week. These are crowdpleasers that are great for transitioning to a plantbased (MM) lifestyle, to add to your weekly rotation, or to serve to your plantbased family/friends when they come to visit. I hope these recipes will bring you inspiration, joy and comfort, as they do for me 🥰. Wishing you all the best health and happiness ✨! Dimphy 🌻
