Rainbow Carrot Salad from @lindseyliveswell

While looking for a recipe to highlight our Purple Dragon carrots, we stumbled on this quick and easy gem.

Ease of cooking: 9/10
Flavor: I’d redo the ratio of soy sauce to vinegar. The base is there, and it is good. Green onion would be a good additon.
Make again: yes, but I’d add significantly more vinegar and significantly less soy sauce and sesame oil. taken in Longmont, Colorado by @diningwithdev_

Absolutely delicious birthday dinner at Sugarbeet! Dedicated gluten free fryer = first time having calamari in 10 years

10/10 highly recommend!

Spring rolls have been a staple for me for almost 10 years for good reason. Today we used bell pepper and cilantro from our local farmers market, rice noodles and wrappers from our local Asian market, marinated tofu, and avocado. Kewpie mayo dipping sauce not pictured. Because I am who I am, I saved seeds from the bell peppers so I can grow them next year #thrifty ! taken in Longmont, Colorado by @diningwithdev_

One Pot Un-Stuffed Cabbage Soup from @thenaturalnurturer

Rating: 9/10
Flavor: It really does taste like golabki, but with half the effort. Absolutely delicious, affordable, and easy. Adding to the list of favorites! by @diningwithdev_

Zestful Kitchen Shrimp Soup from @zestfulkitchen

Rating: 7/10 light and flavorful. Incredibly easy and came together quickly. The cabbage was a bit overcooked for my taste, but that could easily be changed! taken in Fort Collins, Colorado by @diningwithdev_

Chicken Biryani from @gymtrav

Rating: 5/10 not really biryani flavor, the spices are…something else. Definitely got some crunchy pieces of rice. I like the idea of it, but would change the spices and add more ingredients. taken in Fort Collins, Colorado by @diningwithdev_

Maple Cinnamon Sweet Potato Casserole by @chefalextrim

8/10 tastes similar to pot roast with added sweetness and spice from the sweet potatoes. Minus points for TAKING 4 HOURS and looking ugly because I refused to pipe the potatoes (my b @trevor.stroud ), but so yummy and fall-coded.🍎🍠🍁🍂 taken in Fort Collins, Colorado by @diningwithdev_

Throwback to Mother’s Day and this delightful meal (and company). Teocalli is completely gluten free and completely delicious. The chef showcases a twist on Oaxacan cuisine that is pure delight.

Rating: 9.75/10 (who serves a dish with only TWO corn tacos!!?!) need to go back asap

Shoutout @poudrelibraries for this book, use your library kids

Lamb with Spinach (we used beef chuck) and Chai from Maddhur Jaffrey’s Indian Cookery

Saag: 8.75/10 (Trevor gives it a 9/10)
Chai: 9/10, addition of ginger would perfect this
