A NEW STANDARD.

If you have stepped into the Workshops within the past few weeks, you may have noticed a small change in our drink sizing. We want to explain this impactful change to you right here, right now! We have put a lot of thought and intention into creating every drink that has gone on our menu. A lot of these drinks on our core menu were developed as beverages to be served hot, and we are now considering how we can improve our iced drinks so they can have the same intensity.

In short, we have made a few changes to the way we size and serve your beverages with the idea of a better drinking experience in mind.

01 - THE CUP

Ice takes up space. Your drink shouldn’t have to lose any volume to accommodate for it. Because of this, we are now serving our drinks in a cup size larger than what you ordered. Your 12oz iced drink will now be served in a 16oz cup. You will now receive the full 12oz of drink that you ordered, with enough room for ice to do its job and keep the drink tasting well-balanced.

02 - THE 8OZ COCKTAIL TREATMENT

We treat every beverage on our menu with the same amount of care and attention as a craft cocktail, and our 8oz now exemplify that. Shaken, strained and served up or on the rocks. The pour stays 8oz but the vessel changes depending on how you take it.

03 - THE 16OZ

Four shots of espresso are now the default in every 16oz drink served, hot or iced, no special request necessary and to no additional cost.

It’s a small shift in how we think about size, but things that dramatically change the way the drink comes together. We want you to leave knowing that you had a drink that feels considered, complete and worth every dollar. by @discourse.coffee

TLDR: WE HAVE A NEW SISTER COMPANY AND IT’S A ROASTERY AND WE’RE JAZZED.

This coming New Years Eve, Discourse turns 10. That is a sentence that feels insane to say. Gratitude doesn’t even begin to describe it. Y’all have shown up for us, again and again, across zip codes and state lines, for openings and for closures and for all the wild zigs and zags in-between.

The most common question we’ve received over the past ten years has been ā€œDo you roast your own coffee?ā€, to which we have always had to respond that at Discourse, our focus is squarely placed on what magic can be made after a coffee has been sourced, profiled, roasted and shipped.

Today, we’re incredibly excited to announce that the Discoverse is officially expanding. Meet @beourguest.coffee, our new sister company in @theafterglow.group!

After 10 years of hosting you in our homes, we could not be more excited to finally have the chance to be a Guest in yours! Guest applies all of the artistry, intention and attention to detail that you have to come expect from Discourse to curating, cupping and crafting meaningful coffees.

Guest Coffee’s initial offerings are now in our hoppers at all three Workshops and can be found at several of our favorite spaces in Milwaukee, like @cafeattheplaza and @cassismke. Retail bags are available for purchase NOW at our Workshops, with a few distinctive single origin offerings hitting our shelves in the coming weeks!

The mornings are getting colder, the leaves are becoming crunchier, and the days a little bit shorter.

My friends, ā€˜tis the season to get a little ā€œMellon Collieā€.

Rocking with us at our Milwaukee Workshops for the next week and a half is the Smashing Pumpkins,

EXPERIMENTAL 0040 • SMASHING PUMPKINS

SALTED CARAMEL | PUMPKIN | ESPRESSO | SMOKED VANILLA | BROWN BUTTER | CHANTERELLES | SPICED SUGAR

If you happened to try our last Experimental, The Chant, think of this week’s Experimental as the autumnal sibling. Chanterelles bring a rich, umami flavor to this classic PSL build. Would it even be Autumn if we didn’t offer something like this up?! While supplies last, come on by. by @discourse.coffee

Disco Fam!

It’s hard to believe that its been two weeks since our friends @weare.nd released the Milwaukee episode of their award winning series, Coffee: The Universal Lanuage, and almost a month since our premiere at Radio. Available now on YouTube, with more streaming platforms to come, the episode is just under 30 minutes and features us and our Founder @ryan.castelaz alongside our dear friends @likewisemke, @canarycoffeebar, and @tulip.by.hollander. Nes and Darla did such a tremendous job of capturing the essence of what we do here at Discourse: creating pathways for real connection, and for the transference of love and emotion and story and empathy through this humble little thing we call drink.

A massive, gargantuan thank you goes out to Nes & Darla for featuring our work and our home city! We are so honored to have been given a platform like Coffee: The Universal Language from which to live our mission of inspiring and empowering coffee creatives.

There is so much more for us to explore together, and we are infinitely grateful to you all for supporting this mission every day! We love y’all!

PS, We have a ton of friends featured this season, so absolutely check out the episodes on the incredible @morgandrinkscoffee, @picachocoffee, and @palacecoffee as well! by @discourse.coffee

The Chant is back.

A familiar all-time favorite from the Discourse Experimental Archive, Chant is making its return at the Milwaukee Workshops for a limited run while supplies last as we settle into the season.

Originally devised in our Door County days, Chant is comprised of a maple mushroom chai syrup made with sous vide chanterelle mushrooms from our friend @mushroommikellc, espresso, and oat milk, then topped with chanterelle powder and a line of applewood smoked salt. It’s subtly sweet, smoky, and full of umami. Chanterelles are renowned for their soft sweetness, often likened to stone fruit like peach or apricot.

This is the type of drink that just feels right as the seasons shift. If you love the Motörhead on our Craft menu, this is one for you to try! Served iced for the dwindling warm days or hot for the chilly ones ahead. by @discourse.coffee

TLDR: Noelie is hopping the counter! Come say hi for her last shifts on bar at Radio today and tomorrow ā™„ļø

When we first saw Noelie’s mind at work, she had just launched a Twin Peaks-inspired menu of four incredible coffee creations. Our founder, Ryan, went with a few Discourse drink makers to see what she was up to, and left wildly impressed by Noelie’s ambition and intuition. Just a few weeks later, she was ringing up our first-ever guest at Radio Milwaukee.

From her early days as a core member of our drink-making team to her current role as our Social Media Manager, Noelie’s contributions to Discourse are far too numerous to recount on a single Instagram post; spanning from some of our favorite drinks, to thousands upon thousands of cortados and lattes in your patient hands, and the modern look and feel of our brand on the internet.

If you’ve been to Radio since we’ve opened our doors, particularly on the weekends, there is a pretty high chance that you have had a drink made by this incredible soul. Her aptitude to consistently uplift both the members of our team and the daily lives of our guests is inspiring. Noelie is incredibly warm and welcoming, brimming with genuine curiosity. She has an innate ability to make you feel seen, heard, and valued, and a wild range of true expertise, from sewing and mending to every fact and figure for just about any piece of vintage apparel and ephemera. Noelie has the eye of an artist and the hands of a craftswoman who breathes life into every piece of work she creates. Her presence, passion, and personality will be dearly missed at the workshop.

While tomorrow is her last day behind the counter, Noelie won’t be a stranger, continuing on as our Social Media Manager at Discourse. If you’re looking to make up some Noelie time in your life (we get it), check her out @thebrasslady, her vintage apparel company, or hire her to make your social media look as pretty as she’s made ours.

Noelie – our queen of hearts – we love you, and we’re so grateful for the time we’ve had with you behind the counter. Ubuntu, friend, we would not be us without you! Come help us see Noelie off with a big ole hug or high five today or tomorrow! by @discourse.coffee

Our latest featured roaster comes to us from Houston, Texas: @blendincoffeeclub

For this rotation, you can find two of their offerings on our pour-over bar. Both from Huila, Colombia and although these coffees were grown in the same region, they couldn’t be more distinct. The El Diviso Ombligon, a thermal shock anaerobic natural, bold, brash, and shockingly distinct. Cherry Dr. Pepper meets concord grape and black licorice for an addicting and incredibly unique profile. The Los Nogales leans sweeter, with notes of fruit punch, raspberry and creĢ€me bruĢ‚lée.

The Los Nogales marks our first-ever decaf pour-over offering at our Workshops and we couldn’t be more excited about it! This is an extremely similar coffee to the one that Weihong Zhang, the founder of Blendin, used to win the 2024 US Brewers Cup Championship, making this offering particularly exciting.

Both are now pouring at all of our Workshops, along with two EXTRA SPECIAL offerings from Blendin pouring exlusively at our Fulton Market workshop (okay Panama Geisha!!!). These will be available for the next few month, along with boxes available to purchase on our retail shelves for your home brew bar. by @discourse.coffee
