Followed cocktail class with a three course Chinese New Year dinner at Madame So the Vietnamese restaurant. The food was simply perfection. The entree was a deconstructed marinated chicken salad,and the mains a deconstructed Beef Bah mi. I do love a good deconstructed dish so 2000. Reminds me of the early culinary competition years at Long Bay College. Dessert was a triumph of soy paracotta with yams, mango sorbet and tapioca. by @divarianz

Had an on-site cocktail lesson with the the companies mixologist Bob and one of his bar staff Tivita. The cocktails are next level here.

They walked us through a Fijian iced tea using local spirits and a porn-star martini. We decided to make the second as it uses dry and wet shake followed by a double strain. The passiionfruit and mango notes wirh vanilla are delicious. The dry prosecco shots to cleanse the palate first.

Bob also uses two local whiskies one with kava and the other was peanut. The other people in the class were from Ireland and were great fun. by @divarianz

Another beautiful meal this time at Koko the authentic Fijian cuisine restaurant. A relaxed start after trying kava and a large cocktail! Grant had the koko bowl made for him at the table. The restaurant is buy the playground much loved by the youngest of diners. The day was super relaxed due to an afternoon massage and facial...sigh by @divarianz
