Another Dessert for Mom

Originally, I wanted to make an ice cream sandwich to replicate a Good Humor ice cream bar (next time!), but time got away from me. Instead a strawberry shortcake sundae.

It started with strawberries from the market, picked up while staying at the cottage my Mom’s family visits every year. They were coated in sugar to draw out their juices, then dehydrated and rehydrated in their own liquid. Some of this was made into jam, finished with red vermouth, and folded back into the strawberries. This went into the bottom of the glass, for a little boozy finish from the vermouth. :)

The strawberry juice sat in the fridge for a day or two. When I poured it off, a glossy syrup had settled at the bottom of the jar. A little salt turned it into something resembling a strawberry caramel - salty, jammy, concentrated. I rippled it through the ice cream and spooned more over the top. My favourite part.

The ice cream was a custard base made with uncooked strawberry juice. The strawberries were frozen, thawed, blitzed, and strained. The juice was adjusted for acidity and sweetness, added to the cooled custard, and left to rest overnight before spinning. The salty strawberry gel was rippled through at the end.

Throughout the sundae there’s a shortcake crumble made with heavily toasted almonds, ground into flour, and lots of toasted milk powder. The almonds brought a deep, nutty aroma, while the milk powder added another layer of yummy toastiness. I left the crumble slightly underbaked, giving it a soft chew among the cold ice cream and strawberries. There’s some whipped cream in the glass as well :)

I have a tendency to get a little too detailed when it comes to kitchen processes. But while working at @jamils.to I’ve been trying to dial that back a bit—just a bit;)—and follow my palate more than the numbers. This dish is a reflection of that: a little freewheeling with some controlled technique.

Each year, I make a strawberry rhubarb something in memory of my mom. Today happens to be her birthday, so it feels both timely and a little magical to be serving this dish here at Jamil’s. Happy Birthday, Mom 💛

This past year has been one of the wildest for me. Full of dramatic ups, downs, twists and turns. You sure do miss your friends, family and cooking while on the road. This morning I walked around Margate, stopped at @fortscoffee and had a spectacular flat white. Mom and I used to go on little coffee trips together, so it felt like a fitting way to start the day.

Afterwards, I walked down to the beautiful Margate Beach. I brought a small amount of my Mom’s ashes with me on tour, mostly because I knew I’d be going to @st.john.restaurant to eat, and I wanted her there for such a special experience.

But there was another reason I brought her with me. Mom and I shared a love for Jamie Oliver, who’s from Essex. One Christmas break, I must have been about 12 or 13, Mom and I sat on the couch for an entire day watching reruns of The Naked Chef and Oliver’s Twist. It’s one of my favourite memories we shared (we have so many)

So, letting her go here in the UK just felt right.

When I started my little walk, it was rather grey (in the UK? No way!) and incredibly windy. After I finally decided to let her go into the North Sea, a little wave splashed me, the wind suddenly became much more gentle, and the sun actually started shining down on me.

It’s been a few hours now, and the sun is still shining strong.

I’d like to think Mom had something to do with that.
