Cheat sheet for how to win a 19-person one pot dish challenge on Food Network:

80/20 Hainanese Chicken and Rice (One Pot version):

Ingredients
2 chicken thighs (450 g)
2 tsp sesame oil (5 g)
¼ tsp salt (1.5 g)

Rice
1 cup jasmine rice (200 g)
6 clove garlic (15 g)
½ inch ginger (15 g)
3 green onions (45 g)
1 ¼ cup chicken broth (300 g)
1 tsp chicken bouillon powder (5 g)
½ tsp turmeric powder (1 g)

Ginger Scallion Sauce
½ inch ginger (15 g)
1 green onion (15 g)
1 tsp sesame oil (5 g)
salt (1g)
2 tbsp neutral oil (25 g)

Chili Garlic Sauce
6 clove garlic (15 g)
½ inch ginger (15 g)
2 tbsp sambal (25 g)
2 tbsp sriracha (25 g)
1 tbsp chicken broth (15 g)
1 tsp lime juice (5 g)
2 tsp sugar (10 g)

Toppings
1 cucumber (100 g)
cilantro
green onion

Directions
1. Place chicken thighs in a mixing bowl and season with sesame oil and salt.
2. Add jasmine rice, garlic, ginger, green onion, chicken bone broth, chicken bouillon, and turmeric powder into a pot. (No need to rinse the rice)
3. Place chicken thighs on top of the rice.
4. Get the pot up to a boil, then drop to a simmer. Cover with a lid and simmer for 20 minutes or until the water completely evaporates.
5. While your chicken and rice are cooking, prepare your sauces. We’ll start with the ginger scallion sauce. Sart by adding ginger, green onion and salt into a bowl.
6. Heat the sesame oil and neutral oil in a pan until hot. I usually heat the oil until I start to see the oil start to shimmer or produce the first whisp of smoke. Please watch over the oil while doing this step to avoid accidentally starting a fire.
7. Pour hot oil into the bowl with the rest of the ginger scallion sauce and mix.
8. To make the chili sauce, add garlic, ginger, sambal, sriracha, chicken broth, lime juice, and sugar into a bowl and mix.
9. After 20 minutes, take the chicken out and cut into slices or serve as is. Set the rice in the pot aside and let rest for another 10 minutes. Plate up a scoop of ginger garlic rice with chicken, the sauces, and optional toppings like green onion, cilantro, and / or cucumbers.

This is the easiest & crispiest Peking Duck you can make in an air fryer that get’s you as close as you can to that legendary crispy skin. You also don’t need to roast an entire duck or blow air into a duck with a bike pump — that’s not a joke, that’s exactly what the traditional recipe calls for.

For the full recipe with step-by-step video guides, macros, and more, check out:

Cooking doesn’t need to be hard or complicated. Often, you’re simply looking for a recipe that gets you most of the way there with minimal effort, hence 80/20.

So I did a lot of homework, testing different seasonings, dry times, and cook times — and I think this is probably as close as you can ever get with simply an air fryer. Now to be perfectly clear, this method could never beat the real Peking duck you would find at a restaurant in Beijing — that would be a ridiculous claim, but it does give you remarkably crispy and delicious duck that will definitely satisfy your Peking duck craving.

Never imagined I’d almost eat the whole cake. Coming into 100 Cooks, I had very little expectations. In fact, the thought of winning felt so laughable I figured if I could just survive my first cook I’d be more than happy, and anything after that would be a cherry on top.

This is easily the most challenging thing I’ve ever experienced, but the funny thing about a pressure cooker is how much of a mirror it can be. It can show you a lot about yourself and, in some cases, pull something out of you that you didn’t know you had.

I’d like to thank everyone behind the scenes that I had the pleasure of meeting @mikesnapspix, @havenhobart , Brian Hennessey, @spatializerdave, @tonydelvecchio_. Thank you to @totallyjovialcody for hyping me up and believing in me during the interview process. I now have an immense appreciation for the village it takes to produce a show like this, and by the end of a 14 day shoot the crew really feels like family.

Thank you to the warmest host @terrycrews for being my security blanket in the arena. Thank you to both @guarnaschelli and @nick.digiovanni for the learnings I’ll never forget. And of course, thank you to @foodnetwork for the ride of a lifetime. taken in Los Angeles, California by @dougdoesdelicious

How to get into a top 8 finale of a Food Network competition show:

Ingredients
0.75 lb manila clams (338 g)
1 pack noodles (150 g)
1 cup ice (240 g)
⅝ cup water (150 g)
0.2 cup sake (50 g)
2 tsp hondashi (6 g)
1 tbsp lemon juice (15 g)
2 stalk green onion (30 g)
½ lemon, sliced (30 g)
1 tbsp extra virgin olive oil (15 g)
¼ tsp black pepper (0.4 g)

1. Rinse the manila clams under cold water, scrubbing the shells clean. Discard any that do not close when tapped.
2. Prepare the noodles according to the package directions. Drain and rinse immediately under cold water to stop cooking and cool them down completely. Set aside.
3. In a pot, combine water, sake, and hondashi powder. Bring to a boil, then add the manila clams. Lower to a simmer and cover the pot. Make sure you do not boil the clams!
4. Cook and let clams steam for 6 minutes until the clams open. Remove the clams and set aside, discarding any that did not open.
5. Add the whites of the green onions, black pepper, and lemon juice to the clam dashi stock. Stir to combine and then add ice. Set chilled stock aside.
6. Remove clam meat from shells if desired, or leave in shells for presentation.
7. Place the cold noodles in bowls. Pour the chilled clam broth over the noodles. Top with the cooked clams, extra virgin olive oil, additional black pepper to taste, and finally the greens of the green onions, and lemon slices. Serve and enjoy!

Dairy foods, like milk and yogurt, are a source of high-quality protein, plus milk provides electrolytes, making them excellent for post-workout recovery, so this smoothie is one of my go-to ways to stay healthy and consistent every day.
