White Chocolate-Filled Pistachio Cookie 🎀

The raspberry-filled one used to be my favorite but I can officially say the white chocolate has taken the lead 🫶🏻

I think white chocolate pairs even better with the rich, buttery texture of pistachio✨ It also goes perfectly with the cookie's gooey center 🤍

Now I'm wondering if the lemon curd filling is going to surprise me too 👀

Pistachio Cookies with Raspberry Filling 💚

My favorite giant cookie so far ✨

The inside was so rich and the raspberry filling was such a good match (next time I’ll definitely be more generous with the filling😄).

And this time I got the baking time right on my first try😎

Almond Cookies 💛

Ingredients : 150 g egg whites | 175 g powdered sugar | 500 g almond flour

Mix egg whites, powdered sugar and almond flour. Let it rest in the refrigerator for 30 minutes. Divide it into 35-gram portions and coat them in powdered sugar. Bake in a preheated oven at 170°C / 340°F for 20 minutes 🍪

Whipped ganache–filled buttercream cake 🌸
I love using ganache for the crumb coat as well. It makes the cake sturdier and more delicious.
I used frozen raspberries inside and soaked the cake layers with coffee ☕️
