RETURNING THIS THURSDAY: BERLINER WEISSE A refreshing, lower-alcohol (3.2%) sour wheat beer for the hottest of summer days; pale, lightly hazy, and effervescent, water cracker malt and a gentle minerality showcase its lemony-tartness and Greek yogurt tanginess. Like all of Dovetail beers, we employed traditional methods into making our Berliner Weisse — it’s a single-decoction, coolshipped, and open-fermented. But it also features some other traditional methods, based on both historic recipes and inspired by the Berlin-based breweries who continue to brew this beer (shout out to Schneeeule, a v influential brewery to this writer). So, there was a hop mash. And, there was no boil. We also introduced a new water profile — one based on Berlin’s water, which is harder than the Pilsen CZ profile we usually use for our beers. Service traditions are just as important to us as traditional brewing methods, so we’ll be serving in wide-mouth goblets. And what about syrups? You may have heard that Berliner Weisses are served with “schuss.” Seems like a marketing thing from a Berliner Weisse brewery that may have made their beers too tart — but it’s now taken the form of tradition, so we’ll have syrups on Thursday, too, made by our friends at Bitter Ex. You’ll be able to choose from Blackberry or Raspberry, with tropical flavors to come later this summer. This is a draft-only release, so you’ll have to come on by to enjoy! by @dovetailbrewery
