This creamy crock pot rotel chicken is absolutely delicious, requires only a few ingredients and less than 5 minutes of preparation time! This dish is a lightened up variation offering creaminess while still controlling portions and utilizing a lower-fat option to keep the dish from being overly indulgent. Once the chicken is ready, you can serve it in soft tacos, hard shell tacos, over tortilla chips, on top of a salad or with your favorite grain such as quinoa or rice!

My easy Turkey Lasagna Soup has been a fall favorite for years, but this time I made one little swap that I’m honestly loving!

Instead of ricotta, I used @Lifewaykefir Farmer Cheese. It’s creamy, high in protein, and made with live and active probiotic cultures, so it works SO well in cozy recipes like this. It has a texture similar to a thick, creamy ricotta without needing any extra prep. 🙌

Save this one for the first chilly night you’re craving lasagna but absolutely do not want to make an actual lasagna!!
