this plate is my fantasy team 🏆

CRISPY BUFFALO CHICKEN TENDER BITES!!!

INGREDIENTS:
Chicken tenders
Buffalo sauce
Honey
@eat___sunny Scallion Ranch
Little gem lettuce
Fresh scallions

TO MAKE:
In a medium mixing bowl, mix together ~1/2 cup buffalo sauce and ~2 Tbsp. honey. Add cooked chicken tenders to bowl and toss to coat evenly. Remove tenders and cut into bite sized pieces.
Place little gem leaves on a plate and dress each lettuce cup with a drizzle of @eat___sunny scallion ranch. Top each lettuce cup with a buffalo tender bite and finish with another drizzle of ranch and scallions.

You gotta make em. ♥️

the sounds of a very good lunch 🙂‍↕️♥️

INGREDIENTS🥜
buckwheat soba noodles
shelled edamame
mix of crunchy veggies (carrot and cucumber here)
scallions
cilantro
peanut butter
chili crisp
@eat___sunny ginger ponzu dressing

TO MAKE🫛
Bring water to a boil and add soba noodles. When they’re almost done, toss in shelled edamame for the last minute or so to blanch.
Drain noodles and rinse under cold water to keep them chewy.
In a mixing bowl combine a big spoonful of peanut butter with the ginger dressing and a little chili crisp. Taste and adjust to your liking.
Pour chilled noodles over dressing and thinly sliced veggies and cilantro and toss to make sure everything gets coated in that luscious dressing.
Eat immediately and/or pack into containers for lunch the next few days.

PEACH & BURRATA SANDWICH 🌀 fresh crusty bread, arugula dressed in @eat___sunny lemon dressing, fresh basil, prosciutto, burrata, sweet peaches, and balsamic pickled onions ✨
