Sticky Beef in Coconut Red Curry Broth

Serves 4

For the broth
400ml light coconut milk
60g red curry paste
60ml beef broth/stock
1 tbsp tamari
1 tsp sesame oil

For the sticky beef
500g extra lean beef mince
1 small brown onion, finely diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1/4 cup tamari
1 tbsp SF maple syrup
1 tbsp arrowroot mixed with 2 tbsp cold water
80g baby spinach

To serve
200g jasmine rice (uncooked weight)
1 Lebanese cucumber, thinly sliced
2 spring onions, sliced

Method
1. Get the rice on first — it’ll be done right when everything else is.
2. Broth: whisk coconut milk, curry paste, stock, soy and sesame oil in a small pot. Bring to a gentle simmer and let it go for 5 minutes while you cook the beef.
3. Heat a large pan over medium-high. Brown the mince with the onion, breaking it up as you go, about 5 minutes. Add garlic and ginger, cook 1 minute until fragrant.
4. Mix tamari and maple, pour over the beef and let it bubble for 2 minutes.
5. Stir through the arrowroot slurry and cook 1 minute until glossy and sticky. Fold through the spinach until just wilted.
6. Bowl up: rice, ladle of broth, sticky beef on top, cucumber and spring onion to finish.

I didn’t take the ā€œstraight-lineā€ path to medicine.

I dreamed of being a doctor from a young age — but didn’t get the marks.
So I studied commerce.
Then I found my way back.

It took extra years, setbacks, doubt, and a lot of persistence — but I’m now a doctor

I’m sharing this because if you’re feeling behind, off-track, or like you’ve ā€œmissed your chanceā€ — you haven’t.
There’s more than one way to get where you’re meant to go.

Should you avoid fermented foods to protect your stomach? 🄬

🦠 H. pylori is the biggest driver
This bacterial infection is considered the cause of around 80% of stomach cancers, and it’s far more common across East Asia.

šŸ§‚ It’s the salt, not the fermentation
The strongest dietary link is with salt-preserved foods, like heavily salted pickles, meat and fish.

šŸ“Š Correlation =Ģø causation
Japan and Korea are also two of the longest-living countries in the world, with life expectancies around 84–85 years.

šŸ„› The benefits are real
In a Stanford study, eating more fermented foods increased gut microbiome diversity and lowered 19 markers of inflammation.

My take: keep the kimchi, yoghurt, kefir and sauerkraut on your plate. If you’re watching your salt, just check the label.

Anti-inflammatory diet: yes or no? šŸ¤”

My verdict as a doctor: YES. Not by cutting foods out, but by adding more colourful plants, oily fish, olive oil and legumes.

šŸŽ UPSIDE-DOWN APPLE BANANA PROTEIN CAKE
Serves 12
166 kcal | 10g protein | 14g carbs | 7g fat | 2.9g fibre (per slice)

TOPPING
- 2 medium apples (~300g), cored and thinly sliced
- 1 tbsp (14g) coconut oil, melted
- 1 tbsp (20g) SF maple syrup
- 1 tsp lemon juice
- ½ tsp cinnamon

CAKE
- 3 ripe bananas, mashed
- 3 eggs
- 200g low-fat Greek yoghurt
- 3 tbsp SF maple syrup
- 1½ tsp vanilla
- 100ml unsweetened almond milk
- 75g oat flour
- 75g almond flour
- 2 scoops (80g) @macromike Caramelised Apple Crumble protein
- 1½ tsp cinnamon
- 1½ tsp baking powder
- ¾ tsp baking soda

METHOD
1. Preheat oven to 170°C. Line the base and sides of a 20cm round cake tin with baking paper.
2. Mix the coconut oil, maple, lemon juice and cinnamon, then spread over the base of the tin. Fan the apple slices over the top in overlapping circles.
3. Whisk banana, eggs, yoghurt, SF maple syrup, vanilla and milk.
4. Stir in oat + almond flour, protein powder, cinnamon, baking powder and baking soda until just combined.
5. Gently spoon the batter over the apples and smooth the top.
6. Bake for 45–55 min, until golden and a skewer comes out clean. If the top browns too quickly, cover loosely with foil after 30 min.
7. Cool in the tin for 10 min, then flip onto a plate. Let it cool completely before slicing.

20 minutes. 60g of protein. And it still feels like a proper dinner 🐟

This is what I make after a long shift at the hospital. Crispy-skinned wild salmon on a whipped pea and feta sauce, with charred asparagus and a pistachio, lemon and chilli pea salsa for crunch.

Why it works:ā€ØšŸŸ Wild salmon gives you omega-3s, which most Australians don’t eat enough ofā€ØšŸ«› Peas, asparagus and basil add 9g of fibre a serveā€ØšŸ§€ Cottage cheese makes the sauce creamy and adds protein

Per serve: ~600 kcal | 60g protein | 28g fat | 29g carbs (incl. 9g fibre)

If I had to fix my diet from zero tomorrow, this is exactly what I’d do šŸ‘‡

I’ve done it before. Back in the day my eating was a mess, and what finally worked wasn’t a strict plan. It was small habits, one at a time.

7am starts hit different when everything else is already sorted.

As a first-year doctor, efficiency isn’t a nice-to-have - it’s how I still get training in, protect my sleep, and don’t spend my mornings deciding things I could’ve decided on Sunday. Meal prep handles food. Turns out the same logic applies to skin.

I’ve been using @cerave_aunz’s new Hydrating HA Water Gel - hyaluronic acid to draw moisture in, ceramides to actually lock it there so it’s not gone by the time I’ve finished a shift. 3 days of plump hydration in 3 seconds*, which is about as efficient as it gets.

Same rule either way - the right ingredients, doing the right job, so you don’t have to think about it twice.
