251 days.

251 days of hard work, determination, highs and lows, ups and downs, blood, sweat, maybe a few tears, and definitely a few tears in our clothes, got us to where we are today.

Elizabeth’s is more than just a restaurant. It’s a part of us. From the design, to the details, to the way we trained our team, this came from our heart and soul.

This is family.

251 days is less than nine months. For the kind of transformation we took on, that’s a pretty quick turnaround. But it shows what can happen when you have a plan, a great team, people who support you, and the discipline to keep moving forward every day.

On the days you don’t want to show up, show up anyway. That’s half the battle. Do a little bit every single day, no matter what it is, and I promise you’ll end up somewhere you never thought possible.

For us, that light at the end of the tunnel is today.

What once felt like an overwhelming challenge is now standing right in front of us. And it hasn’t been easy. This industry asks a lot of you. Long hours, late nights, early mornings, holidays, weekends, and time away from the people you love. You have to really love it. You have to love what you do. And when you feel like walking away, that’s when you dig a little deeper.

Thank you to my beautiful fiancée, Michelle, for pushing me to become the best version of myself. I would not be here without you.

Matt and Liz, our namesake, thank you for trusting me not just with this project, but with your company and our entire organization. I appreciate you both more than you’ll ever know, and I’m proud to have you as part of my family.

Chris, Corinne, Pete, and the rest of our team, I’m so damn proud of each and every one of you.

Let’s get to work.

Today I had the opportunity to join Stockton University’s HTMS career development class and share my professional journey. 10 years ago I was sitting in that same classroom listening to people who I viewed as successful share their stories and inspire me to do something special myself. Now I’m the one up there talking about my own journey. Reflecting on it now is pretty crazy, what a full circle moment. I don’t see myself as successful, not yet at least. This is just the beginning. I have a long way to go and a lot more I want to accomplish. But being able to do that was a really unique experience, and hopefully I was able to give someone in that classroom a little bit of motivation and inspiration like my speakers did for me. Since 1952 @jerseyfreeze1952 has been making the best soft serve ice cream in NJ cuz! Stop by the Freehood location to also try out the grill 🍔. Also check out there location in Holmdel and coming on today, 8/19 in Colts Neck! I still can’t get over how good that ice cream was. There are so many things to be grateful for lately. Congratulations to not only my boss, but my mentor and one of my best friends on the release of his new book @deathofhospitality - that being said we’ve been working on some things behind the scenes. For those of you who don’t know, with the opening of @mezcalnj we also began the journey of our Hospitality Group, Death of Hospitality. Thank you Matt, @lizborowski_ and @chefchristopherdutka for believing in me and entrusting me with my new position as Vice President of our group and an even bigger thank you to @meeshcolucci for pushing me to be the best version of myself I can be. I highly recommend this book to anyone not only the restaurant/hospitality industry but to anyone who deals with people in any way, shape or form. Today, February 14, 2025, marks a huge milestone for all of us—we have officially received our TCO and are set to begin operations at Mezcal!

This has been an incredible journey, full of challenges and hard work, but we pushed through, and now, we’re just weeks away from opening our doors. I couldn’t be prouder of this team and everything we’ve accomplished together.

Thank you for your dedication, passion, and commitment to bringing Mezcal to life. This is only the beginning, and I know that what we’re building will be something truly special.
