It’s been a while since I shared any behind-the-scenes moments of our work — honestly, there’s just never enough time for it all. But this week, I managed to capture a few things, and I’d love to share them with you.

Here is the shaping process for our bread, followed by the result: fragrant, crispy, and with an absolute divine aroma.

Next up is the pure geometry and magic of laminating croissants. And here is another one of our ongoing experiments — we are currently searching for the ideal shape for a couple of new autumn flavors, and this little "basket" feels like a perfect fit for one of them. Yes, it’s not quite refined to perfection yet, but I already know what color and shape it will be. I just need to polish a few final details. Perhaps my inner perfectionism is a bit too much sometimes, but I think it’s precisely what helps me find that exact balance of crunch, texture, and flavor that you all love.

Finally, we wrap up with our living, mesmerizing mass of dough — an absolute giant of a living organism that gives birth to these little bread masterpieces and our beloved focaccia.

We’ve experimented with so many flavor combinations and shapes over the past few months, but this classic duo wins every time. Silky whipped mascarpone paired with rich strawberry compote nestled inside fresh, flaky layers. Truly the most balanced and delicious version yet!

We are adjusting our schedule for the month of August.

We completely understand that just one week of baking might not feel like enough to treat you to all your favorite goodies! However, right now we need to focus all our energy on our new café project so we can open our doors as soon as possible and start sharing our fresh baked goods with you every single day.
