An amazing night at @hastings.castle watching #beyondthebayeaux. @jamespurefoyactor with incredible animations by @battlecat.png and music by @bookofvoices. Hastings is brilliant for this sort of thing and I’m excited about the plans to invest in the castle for more events and the West Hill for the visitors centre. by @effdeebee

Messy plating but lovely Coriander Chilli Chicken traybake from @rocketandsquash’s book ‘Peckish’. Chicken thighs marinated in blitzed garlic, ginger, green chilli, lime etc and then baked with red onion, green pepper, tomatoes and cumin, with @boldbeanco Queen red beans stirred through just before the end of cooking time.
I wasn’t sure whether the beans would work but they did. Served with Greek yoghurt and aubergine pickle. So good, and really nice the next day too. by @effdeebee

I’d forgotten how much I love Fattoush. A total fridge raid - little cucumbers, mixed toms, radishes, pomegranate, spring onions, mint parsley and basil, Zatar baked pitta and a very mixed dressing of a bit of yesterdays that had preserved lemon and herbs in it, and bulked out with EVOO, lemon juice, garlic and sumac. A bit of feta sprinkled on top. So good. by @effdeebee

I stumbled across a recipe by @thewoksoflife for Thai Basil Mock Duck Stir Fry, and I had a shed load of Thai basil that needed using, and most of the other things (red pepper, green beans, onion, garlic and mushrooms) , so I went in search of mock duck.
Turned out really nicely - I think I’d probably just use tofu next time as it was the Thai basil and sauce (light and dark soy, oyster sauce, sugar etc) that made it, but a nice experiment ☺️ by @effdeebee

Another ‘very simple, not reinventing the wheel, but so good and why don’t I make it more often’
Roasted mixed @iowtomatoes that were getting a bit squidgy (salted for 10 mins first, roasted with no oil so they really intensified) half a ball of Burrata that was on its way out, sourdough rubbed with garlic and topped with 3 of the the 6 basil leaves I had left. Drizzle of my best EVOO, S&P. Those tomatoes were SO tomatoey. by @effdeebee

Sometimes, all you need is a simple tomato sandwich, but it has to be a very good tomato. A large one from @iowtomatoes, salted and left for 10 mins, some decent fluffy white bread and a mayo made with smooshed anchovies, grated garlic and Kewpie. 🙌🏻 by @effdeebee

A messy little plate but absolutely delicious. I’m not still on top of my steak game but this was seared very quickly on my griddle pan, weeping tiger/tiger tears dressing that I made with roasted rice powder (really makes a difference), charred PSB and a herb salad (coriander, Thai basil, mint, lettuce and spring onions) 🙌🏻 by @effdeebee

I keep a whole lemon in my freezer these days - frozen lemon pasta is my current go to quick meal in the summer if I want carbs. It only takes as long as the pasta takes to cook. Grated frozen lemon (pith and all - I buy unwaxed seedless ones) Parmesan, butter, salt and pepper, basil and a bit of olive oil on top. Lush. Thanks @5oclockapron for the inspo - TikTok trends give me the ick too but this one’s a good one! by @effdeebee

Pork belly with watermelon - an adaption on a @nigelslater recipe. Loads of ginger, chilli, fish sauce, lime juice, on top of watercress, coriander and Thai basil. by @effdeebee
