Dinner with a bit of comfort and a bit of culture. @makan.at.eliseos’ take on Pinikpikan and Chopsuey. I’m sure every household around here, and where I grew up in Baguio, had their own version of these dishes. This is ours..For the Pinikpikan, we wanted to hit the flavor levels of the traditional dish but work on the texture and overall experience. And what better experience than a beautifully fried piece of chicken - smoked before frying of course. For the gravy, we made a semi-traditional Pinikpikan broth with the etag we get from @hillstationbaguio (available frozen at the deli 🏁)For the Chopsuey, we went back to our experimental roots and got all the basic ingredients of the dish - and/or whatever is available/fresh in the San Juan market - and applied a little tender love and care to each. Served with a brown butter vinaigrette and mint cream. by @ejishungry

A month ago, I had the pleasure of visiting Philly for the first time and getting to cook and share our flavors at @babysphl. It was part of a two way collaboration project between me, @raqcitty- who also has roots in La Union - and our teams of course. This is a kind of photo diary / appreciation post. The sequence goes : getting to Philly from Manhattan. First stop, Yin Ji Rice Roll in Chinatown for top tier rice rolls and congee. Then on to Baby’s with the beautiful interiors and everything I ate there. Next up are the sites - museums, @PsQsShop for some shopping, a bit of drag and good times at @bak_bar, a hole in the wall Vietnamese spot (thank you @dangihatecardio), best Mexican spot @LaJefaPhilly with a proper selection of agave distillates, a members only Italian social club (cheers Dan @santephl), skateboard shop cafe @togetherphilly, proper proper brews c/o @humanrobotgirard, a pig out kamayan feast with @iman.kings and @nikita.arnett at OG spot @perlaphilly, best bespoke cocktails at @theransteadroom with our main man @rito_081, breakfast bahn mis and fries at @capheroasters, one of my favorite dinners in town @mawnphilly, (s/o @_muneno for being my date). Followed by a beautiful family dinner on the rooftop of Raquel and Tam with Iman, Nikita, @yakithechef, @alvin_the_mc. Culminating in the collaboration dinner at Baby’s. What a trip. We are calling it Deliseos — and we’re doing a bit more homework for it than we did for Makan and Eliseos. So, as we’re connecting all the dots, we wanted to involve you guys — our friends, neighbors and guests — to find out what you want to see and taste at the deli. Easily one of my favorite things on the new menu! A cross between a Vietnamese fish dish (cha ca la vong) that made me tear up - my first and only “ratatouille moment” - and a very happy lunch experience in (fish cheeks) New York. Our version of Inabraw : a fried turmeric barramundi fillet with local vegetables sautéed in an alamang butter, lots of herbs and a nam jim sauce on the side. Fresh. Salty. Creamy. Crunchy. Sweet. Sour. Spicy. Beautiful. 🫠New menu is oooon and we can’t wait for you guys to try it! 🙏🏾 by @ejishungry

Been contemplating about this idea a lot - the similarities of skateboarding and the restaurant business. I started out with almost no experience business-wise and running a restaurant-wise. Like learning to skate, you start off with the basics. I guess you could say this was culinary school but it doesn’t really translate as well as you think. In culinary school, it’s always best case scenario. They don’t really teach you what to do when things go wrong. This is where “skate mentality” comes in. You try things over and over (and over) until you get it, then you move on to the next trick, or thing, or task and repeat the process. Getting your bag of tricks is only the beginning. Now we have to talk about consistency and how landing your tricks makes you feel. Of course it’s not gonna be perfect every time but you learn to stick it, no matter how sketchy, and move on. The next thing is finding your own space at the park or spot. Seems like nowadays everyone knows how to do a kickflip. So many other restaurants opening up, competition is fierce. It’s not only doing your tricks anymore, it’s “battling” and maneuvering your way through the crowds. Like a constant skate jam. You try to stand out and hope you find these little pockets of space to flow. It’s not just the tricks too, it’s how you do them - style. Always trying to skate in your own natural way and hoping someone appreciates it. Whether it’s just for you, for points, for “satisfying” your sponsors/investors, or onlookers, or your guests. Whatever you’re doing it for, at the end of the day, it works best when you’re having fun. Here’s to having fun with it! 🍻@makan.at.eliseos 7 years in! 🙏🏾 by @ejishungry
