In case you’re wondering what vegan food looks like 😋

Here are some of my recent personal meals. I aim for whole-food plant-based foods (as close to nature as possible) but see… I also love a good plant-based burger on my lazy days! Progress, not perfection.

My proteins of choice are always an array of beans, chickpeas, lentils, tofu, seitan and soy chunks. These proteins offer way more than just protein. They also offer fiber, calcium, iron and micro-nutrients too. Most people do not get enough fiber so when you have a protein that gives you both and more, why not make the switch?

Saving animal lives and eating healthier can be delicious and fulfilling! If you’d like one of these recipes, send me a DM!

On this World Vegan Day, I’m reflecting about my choice to go vegan and how it turned into the best decision I’ve ever made.

💚I’m vegan for the animals. I grew up feeling close to nature, always outside, always drawn to animals and wanting to protect them. Somewhere along the way I realized I couldn’t love animals and keep paying for them to suffer. Once I made that connection, I couldn’t ignore it anymore, and going vegan felt like finally living in alignment with the kid I used to be.

💚I’m vegan because of my Indigenous roots. My ancestors ate mostly plant-based and lived off the land. Eating plants keeps me connected to them and to the way they lived in balance with nature.

💚I’m vegan because of yoga. As a yoga instructor, I practice ahimsa, the principle of non-harm, toward all living beings. For me, that practice doesn’t stop when I step off the mat. It shows up three times a day at my table, and choosing compassion with every meal has deepened my practice.

💚I’m vegan for the planet. Running @savingtheseasorg , I spend my days looking at what’s happening to our oceans and our land, and the research keeps pointing to animal agriculture as one of the biggest drivers of the damage. Knowing what I know, eating plants is the most honest way I can show up for the planet I’m working to protect.

💚And I’m vegan for my health. Eating a whole food plant-based diet has made me feel better than I have at any other point in my life. I have more energy, I sleep better, and I feel clear and grounded in my body. Studying plant-based nutrition through @nutritionstudies showed me the science behind what I was feeling, and it made me want to share it with everyone.

For the animals, for the planet, for my ancestors, for my health, for my spirit, and for my peace, this choice is a no-brainer for me. The peace it has brought into my life is priceless.

I know it can seem hard at first. It’s a lot easier than you think, and you don’t have to change everything overnight. Start with one plant-based meal today and see how you feel. DM me if you need any help or guidance.

Date night spot in Downtown Clermont @themaisonq ❤️

This is our new favorite place! We had the Blood Orange and Paris Iced Teas, a vegan version of the Mediterranean Platter, their chef special Tofu Sandwich and their new Vegan Blueberry Croissant. It was spectacular, can’t wait to be back!

This was a day for the community, for the animals and for the planet 🌱

When we created @vegansinclermont we knew we wanted to bring the vegan community together, not just online, but in person, shaking hands, making friends and coming together over similar values.

It can feel difficult and alone living in a world that is built on so much cruelty for animals, destroys our wildlife and planet for greed, and promotes unhealthy diets and lifestyles. But when we come together we bring hope, we make a difference.

This was the first fundraiser event of many, supporting our Eat for the Planet program at @savingtheseasorg , our new land conservation chapter @nativspacefl and @pbtclermont

It was a pleasure to share our certified wildlife habitat, our vegetable garden and food forest and cook @mervanawellness for these first founding members of our community! We can’t wait to start planning the next one!

Last weekend, we cooked a fully plant-based dinner for 30 guests at the @vegansinclermont Autumn Dinner Party at @nativspacefl 🌱

On the menu we had an apple mule mocktail, sweet potato chips and berries during “mocktail” hour.

For dinner, an herb-infused maple bourbon glazed tofu with roasted carrots and potatoes, cashew pumpkin mac and cheese, potato squash stew with cremini mushrooms, jackfruit and chickpeas, and pumpkin cornbread muffins.

And for dessert, a spiced dark chocolate mousse dusted with cinnamon.

Every dish was made from scratch with whole ingredients, and watching so many guests enjoy it confirmed what we see with every client: when plant-based food is made well, people love it!

For our health, for the animals, and for our planet.🥂🌱💚

Our first gathering was such an amazing time! The Vegans in Clermont Autumn Dinner Party brought more than 30 of us around one table for a fully plant-based meal, fireside connection, cozy vintage vibes, relaxing beneath the canopy of a certified wildlife habitat in Downtown Clermont.

Thank you to everyone who came. We cannot wait to see you all again soon! Stay tuned for our next gathering!

I got you, sis! Easy Mediterranean platter ⬇️

I grated the garlic with a traditional garlic grater and tossed the paste in extra virgin olive oil. Then I added tahini and sautéed the veggies. I roasted rinsed canned chickpeas in the oven at 400°F for 15 minutes. The couscous only takes a few minutes, and I paired everything with hummus and vegan pita bread from the farmers market.

Every ingredient here helps. Garlic and extra virgin olive oil help fight inflammation. Tahini adds calcium and iron, and chickpeas and hummus bring plant protein and gut-loving fiber. The veggies are packed with antioxidants, and couscous gives you steady energy.

Severe and chronic inflammation is so common these days, and it’s no surprise. As diets lean more toward heavy meat and dairy, inflammation has become an epidemic. Eating more plants is one of the most powerful ways to reduce it naturally. Plant fiber is easy to digest and helps lower inflammation over time.

Seeing a nutritionist matters because so much inflammation comes from what people eat, along with stress, poor sleep, and more. A nutritionist can’t always offer daily or weekly coaching, and that’s where I come in.

As a Wellness Coach certified in Plant-Based Nutrition, I offer a 3 to 6 month program to help you start your plant-based journey. If you want support and guidance, reach out! Follow @mervanawellness to learn more.

Have you been to @tablaclermont ? 🍛

One of my favorite places for obvious reasons! They have so many amazing vegan options that are not only great portions but also delicious. I always go and try something new.

This time I had: for appetizers the Manchurian Gobi (Cauliflower) and the Mango Bhel, for the entrees I had the Madras with soya chaap, and a Guava Mule mocktail to drink.

Spicy Cilantro Lime Crema ⬇️

In a blender or food processor, combine:
1 block silken tofu
A handful of cilantro
1/2-1 habanero pepper
Juice of 2 limes
1/4 cup vegetable broth
2-3 tbsp nutritional yeast
1 tbsp garlic powder
Salt to taste

Blend until smooth.

Plant-based nutrition benefits:
Silken tofu brings complete protein and calcium with zero cholesterol. Cilantro supplies vitamin K and antioxidants. Lime adds vitamin C, which helps your body absorb plant-based iron. Nutritional yeast gives you B vitamins and a savory, cheesy flavor with no dairy at all. Garlic offers allicin, a compound studied for heart health. Together they make a creamy, protein-rich sauce built from whole plant foods.

An easy way to eat more plants:
Keep a jar of this crema in your fridge and spoon it over tacos, grain bowls, roasted potatoes, or salads. It also works as a dip for raw veggies, so every snack and meal gets an easy boost of plant-based nutrition.
