I made very easy grab & go breakfast sandwiches! #breakfastsandwich #elleyeahcookin

I had some turkey breakfast sausage in the freezer, so I cooked that up, opened a can of biscuits and split each one, then put the sausage on half of the biscuit halves and topped with Colby Jack cheese.

Bake at 350 for about 13 minutes.
I wrapped them each in parchment paper and you can pop them in the microwave for 30 seconds from the fridge, 60 seconds from the freezer.

I’m going to have fun making lots of variations of these. by @elleyeahcookin

Made some #fishtacos with tilapia. I didn’t have enough corn tortillas so I used flour (do not even start). #elleyeahcookin

- I used 2 lbs of tilapia
- preheat oven to 400°
- dry the fish, then put in a ziploc to season (I used 2 bags with 3 fish each)
- drizzle some olive oil, then add s & p (these don’t count as seasonings yet 😅)
- for my seasonings I added garlic powder, rosemary, & onion powder
- since I forgot lemons, I used spicy pickle juice as my acid 😋
- threw in ~ 1 T minced garlic for good measure
- mix that all together in your bag while greasing a 9x13 glass dish—I used butter!
- then I put little pats of butter all over the bottom of the pan and sprinkled more of my dry seasonings to the pan
- add fish to the dish, trying not to let them overlap (but it’s ok if some do)
- add more seasoning to the top of your fish and pour your marinade over the top (some dill and garlic cloves were in the pickle juice, and they came too!)
- bake for about 20 mins
- to serve, you can just fork your desired amount into the tortilla—the fish is soooo tender and flaky
PS—even with the spicy pickle juice, the fish was NOT spicy. It just had the best flavor with a little warmth to it. Even the 4yo ate it up. by @elleyeahcookin

Shepherd’s pie stuffed peppers? Kinda. I’m all about one-pan, one-stop meals. #stuffedpeppers #elleyeahcookin
•I browned some turkey (add some baking powder for beef-like juice and browning)
•Mix with sautéed veggies of choice
•Stuff your peppers with the meat & veg + shredded cheese
•Top with mashed potatoes (you know I’m using instant!)
•Top with more cheese!
•400° for 15-20 mins (remember, the meat is already cooked)

They were a really nice consistency—tender enough to chew nicely but firm enough to hold up. I put them in a bowl because when you cut into them, they kind of spread eagle. 😅 by @elleyeahcookin

Super easy and super flavorful sheet pan chicken & veg. #elleyeahcookin

•Heat oven to 400°
•Poke holes in your sweet potatoes and lightly oil them
•Cook for 30 mins (this cooks them halfway!)
•Season meat and veg while you wait!
•I used kosher salt, pepper, garlic powder, celery salt (a recent fave!), and paprika
•Put veggies in a gallon ziploc with enough olive oil to coat, add seasonings, shake!
•Put meat in a separate bag (or 2 bags, if you have as much as me 😅) and do the same
•Put veggies and meat on pan with enough room to breathe
•Check potatoes and flip them—put back in oven
•Cook at 400° for 30 mins (potatoes cook for an hr total, meat and veg 30 min total)

Even the kids asked for multiple helpings!
My intention was 1 sheet pans but it turned into 4 pans because the sweet potatoes were GINORMOUS and there was SO MUCH chicken. 😂 by @elleyeahcookin

Orzo meatball bake #elleyeahcookin
…
- Oven to 400°
- 1 package of Boursin (I will do 2 next time!)
- 1 1/2 c orzo (maybe 2 c next time)
- 1 c sun-dried tomatoes (they had a little oil still on them and I chopped them up a bit too)
- 3 c chicken broth (maybe 2 1/2 c next time)
- about 20 meatballs (next time I will bake separately bc they weren’t crisp enough)
- I added 2 1/2? c of spinach (at least 3 big handfuls and then I tore it to make the leaves smaller)
- I seasoned it all with s & p, Italian seasoning, garlic powder
- I added shredded carrots for some more veg
- 20 min covered, stir
- about 15 minutes uncovered (could be less if I do meatballs separately)
- I added shredded parm on top (of course!)

•I can’t remember where I saw this but of course I improvised and will improve it next time even more with my notes above.
•Very yummy but needs more cheese! by @elleyeahcookin

Salmon rice bowls. (I didn’t know these were “viral”???)
Easy but I hate the prep. Cutting th fish was 😩😩😩 It was a monster. I used almost 3 lb of fish! #elleyeahcookin #salmonbowl
…
•Veggie marinade: soy sauce, ponzu, sesame oil, salt, honey (let these sit while you do everything else!)
•Salmon marinade: (salted & tossed fish with olive oil FROM ROMA first) soy sauce, ponzu, white wine vinegar, sesame oil, Dijon mustard, 2 tsp-ish of garlic, honey (marinate as long as you can, but even a few minutes is still very tasty!)
•measure with your heart
•cook rice then let sit covered while you cook the fish (next time I won’t use so much and it will crisp up more)
•cook fish until at least 145°, about 5-6 minutes (bc there was so much I could t really flip all the pieces over so I just kept tossing and stirring)
•Assemble! Rice (I stirred in a little butter, soy, & sesame)+ veggies + salmon + cucumber (thank you @hamsterkaren for the Bagel Not Included seasoning!) by @elleyeahcookin

Smashed turkey tacos 🤷‍♀️ I needed to use up some ground turkey so I seasoned some and spread it on tortillas to make a sort of patty. Cooked them, then added cheese and kept flipping them. #elleyeahcookin #turkeytacos

This made 10 tacos!
- 1lb ground turkey (or beef or chicken)
- mix in salt + seasoning of choice
- spread thinly over tortillas—I used a big spoon
- place meat side down on a med heat pan or griddle that’s been oiled and/or buttered
- cook 2-3 minutes until brown and cooked through (I still checked all of them with a meat thermometer to make sure they were 165+!)
- flip to meat side up and add cheese
- cook for about a minute to let it melt onto the meat
- flip back to meat side down to turn that cheese into a delightful little crust
- cook to desired browning
- add desired toppings! I added tomatoes and romaine (forgot pickles 😫) & drizzled with Caesar dressing bc I am a Caesar freak! My son added chick fil a sauce lol
- You could eat it flat like a tostado or fold like a taco
- Next time I’m making these outside on my big griddle! by @elleyeahcookin

Leftover burgers = #cheeseburgersalad
#elleyeahcookin
- I used a starter salad and added iceberg & spinach to make it heartier.
- Added tomatoes, relish, some shoestring carrots I had, bacon pieces, croutons, and of course, chopped burger patties topped with cheese!
- I used a food chopper to dice them, then topped with shredded cheese and microwaved the meat/cheese to get it hot and melty. It was such a nice contrast with the cold crunch of the salad!

S’mores Cookie Pies: for when you just want a lil something sweet, and fast! #elleyeahcookin #smorescookiepies
Sure I can bake but sometimes this premade stuff really hits the spot. 🍪🥧
- 1 pkg pre-made mini graham cracker pie crusts (6 crusts)
- 1 pkg of your fave cookie dough!
- chocolate chips
- mini marshmallows
- my son also wanted a Reese’s one so I used some Reese’s pb chips too
- preheat oven to 350°
- fill each cup with a layer of chocolate (and/or pb) chips
- top with marshmallows
- I smooshed my cookie dough together until it was all joined and flat
- Top each pie tin with enough cookie dough to cover it. Not too thick so it overpowers the other ingredients, but not too thin so that it cracks open (listen to your heart here, and see pic ☺️)
- Make cookies out of any leftover dough and add them to your pan like me!
- Bake for 18 mins (I started with 12 and kept putting them back in—keep checking!)
- Serve warm and with ice cream! 😋 by @elleyeahcookin

Wanted to add this because I made a reeeally good #alfredosauce in a pinch and didn’t want to forget it! #elleyeahcookin
- 1 stick of butter
- 1/2 c of heavy cream (I would normally use a whole pint but this was all I had left so then…)
- 1 c (or so—I did not measure) ricotta
- stir on medium low until everything melts evenly
- I added some asparagus I had on hand (but any veg or green should work!)
- 2 tsp minced garlic
- salt and pepper to taste
- lots of fresh parm! I kept adding slowly until the sauce was thick enough
- then turn down to low so it will thicken some more

Pour over pasta when finished! I used Rana brisket ravioli and O. M. G. by @elleyeahcookin
