🍂🍳🏈🧇Fall break, fueling, & family time!! 🧇🏈🍳🍂
+ pumpkin protein pancakes recipe! 🎃💛

Hey y’all!! Oh my goodness how is it almost November? So grateful and blessed to have spent some wonderful quality time with my family over fall break - and also happy to be seeing them again in just 26 days now! I’m a little extra giddy too because for thanksgiving this year, we’re actually taking a Disney cruise to the Bahamas! I’m definitely excited to be getting some much needed vitamin D, and I think it will be such a fun getaway! ☀️ For now though, school and training have both been going really good! My schedule for spring has already been approved, and I’ve entered a new base building phase for my running! So those are just a few little updates and then below I have an updated protein pumpkin pancake recipe to celebrate fall for you! Hope you enjoy! 😊 ✨

🥞Protein pancakes recipe!🥞
~ 1/2c (60g) canned pumpkin
~ 30g flour (I used @kingarthurbaking gf flour!)
~ 1 serving egg whites (46g)
~ 1/2 tsp baking powder
~ 1 scoop protein powder (I did @bpnsupps - so good and 22g protein!)
~ pumpkin spice & salt (brings out the sweet flavor!)
~ mix ins/toppings of choice!

Hope you enjoy this recipe, happy fall marathoning, and happy running!! ✨💛

🎃✨Chocolate chip pumpkin loaf recipe!!✨🎃

What better way to celebrate the upcoming fall break than with an autumn inspired recipe?! This chocolate chip pumpkin loaf is the perfect pre/post run snack, and I promise your kitchen will smell like a fall bakery! The nutrition of this loaf is also amazing - giving you complex carbs, vitamins, fiber, protein, micronutrients, and healthy fats too! Best served warm with coffee, and I hope you love it before your morning long run! ☕️

🍂Recipe!!🍂
~ 1 cup (300g) oats (blended to flour)
~ 1 scoop protein powder
~ 180g canned pumpkin
~ 40 ml almond milk (sub other milk of choice!)
~ 1 egg
~ 1 tbs honey
~ 30g chocolate chips (dark is my fav for this recipe!)
~ 1 tsp vanilla extract
~ 1/2 tsp salt and cinnamon (or pumpkin spice if ya have it! I did not sadly lol)

Once you have your ingredients all mixed up, transfer to your loaf pans and bake at 350 degrees for 25-30 mins. Then enjoy!! Hope you love it! 💛💛

Happy fall running! ✨🎃✨ by @ellies_balance

🍎🍁September, sourdough, studying, sunsets, & some running!!! 🍁🍎

Hey y’all!! Cannot believe I am already over halfway through the fall semester! It has been a whirlwind and so much fun, and now we head into the -ber months of fall and winter! (Aka my faves!!) Anyways, over the last couple weeks, I’ve been enjoying studying for all of my classes and taking my first couple of exams! This past weekend, my family actually came down to see my sister and me for our school’s family weekend - and I absolutely loved every minute of it! When I’m not running or working for sports games (we won our family day football game! 🏈) and peer educating, my running and training has been such a great outlet for me both mentally and physically! Especially as it gets more chilly out, it is so beneficial to prioritize movement and things that bring you joy! By doing so, I have noticed better mental health and balance in my life, I’ve had some of the strongest training sessions, and I can better navigate my everyday life with passion and fulfillment! 💛 Of course I also included some fueling inspo for this post as well, so let me know if you want any specific recipes/details in the future!!

🍓Dorm friendly recipe!! Protein oatmeal (with three different sources!)🍓

Hey y’all! Happy friYAY! Here is a yummy protein oatmeal recipe I have been making on repeat in my college apartment! ~ toppings of choice! I did strawberries, peanut butter, syrup, and bee pollen

✨🌸☀️Starting off year 2!!☀️🌸✨

Hey y’all! Wanted to do a little post from all the little joys of starting sophomore year! I’m super excited for the start of fall coming and the coming chilly runs, autumn leaves, and cozy lattes! For now though, I have been loving staying in my new apartment with my sister this year, and I’ve also been enjoying my nursing classes so far! I can’t believe we’re already one week into the school year! Anyways, the pics feature some highlights like first day pics, early morning track sessions, some good fuel, lifts, and farmers market finds! Also I just wanted to give some advice for any busy student athletes out there who may have also just gone back to school too! 💞 My top tip is to organize your schedule in a way that works for you! It can be on a planner, in your notes app, whatever works! This is just the easiest way I have found to manage priorities like my early morning runs, classes and time for assignments, work, free time, and anything else I get up to! Second, make sure you have a quality wake/sleep routine! Not just getting enough sleep, but making sure the sleep you get is actually supporting your energy! That means winding down properly before bed, putting the pencil down to give your mind a rest, and setting alarms so you can be consistent with your schedule! I promise it helps! Then the last thing I will say is to give yourself grace. Some days are going to feel harder than others - some workouts will challenge you, some classes will feel overwhelming, but what matters the most is that you keep showing up, you do the best you can each day, and allow the Lord to guide you through the rest! These are all things that have helped me so far in college as a busy nursing student and endurance/hybrid athlete, and I really hope they can help you too! 💛 Let me know if there’s any posts/topics you would be interested in for the future (training/nutrition/life/etc!) and as always…

Happy running! 🌸✨ by @ellies_balance

🌻✨Back to school & mini obx trip!!✨🌻

Hey y’all!! Had a little post hiatus for a minute there, but now I’m back at school for my sophomore year! Hard to believe I’m now a second year nursing student, but super grateful to be at Elon living with my older sister this year! We love being together in a shared apartment so far, and it’s amazing to have family with you during time in college! 💕 Aside from moving back to NC for the school year, I also got the opportunity to stay at my family’s obx beach house for the weekend while we were moving! It was short, but a lot of fun (and really good weather!) I’ve also been enjoying lots of yummy fuel for all my runs - which I’m happy to say pumpkin themed things are finally in stores! Haha they are my favorite lol. I will say too, I’m happy to be able to run on campus again because there are so many great trails, run club, and pretty views to see when I’m training! So that’s the little life update, and let me know in the comments what all your upcoming goals are or fall plans! 🍂 Also let me know if there’s any specific posts you would want to see in the future!

And as always, happy running!! 🌻✨ by @ellies_balance

Marine corps marathon training week photo dump! 💛🍉🫧🤸‍♂️🩵☀️

Featuring lots of fuel, runs, iced coffee, fun, family, and of course the best part… Annabelle!! 🐈‍⬛ by @ellies_balance

☀️🍉Mid week meal inspo!!🍉☀️

Hey everyone! Wanted to share a staple summer dinner idea that has been fueling me on repeat! In the sweaty and hot weather, big bowls or plates of nourishing carbs, protein, and healthy fats have been a staple while marathon training! (Especially with the carb emphasis!!) Having said that, this barbecue tilapia dish checks all of those boxes, all while being delicious and having enough fuel to meet energy needs - which is so so important for endurance athletes! You can also switch up your veggies or protein for a new fun flavor combo! I hope you love this recipe, and let me know in the comments if you try it!

☀️Barbecue tilapia plate details! ☀️
~ air fried tilapia and zucchini seasoned with salt, pepper, garlic powder, parsley, & cayenne
~ homemade Japanese sweet potato fries
~ 1/2c @good_culture cottage cheese mixed with @newmansown mango salsa
~ @bobsredmill nutritional yeast
~ mini cucumbers
~ sauerkraut
~ barbecue sauce

The best part about this recipe is that most of the ingredients can be made ahead of time and you can meal prep it for a quick and easy dinner! Please let me know in the comments if you love this recipe! Also, let me know how your training is! I’m here to support you, so happy summer running! 💛☀️🍉 by @ellies_balance

☀️🍉Summer miles and smiles!!🍉☀️

Hey y’all! Been a little while since I posted, but I have been enjoying training through the summer and being home with my family so much! In the @marinecorpsmarathon build, I’m going to be getting in around 35 miles this week, and let’s just say with the hotter temps, the runs are getting earlier and longer! I’m so grateful though to be doing what I love and growing so much in the process! There’s truly so much to learn from running aside from the activity itself about the human body, nutrition, strength, recovery, but also elements outside of that! That includes finding community, finding joy in little moments and everyday, embracing challenges, and learning what brings you happiness and keeps you grounded. Outside training though, I’ve been enjoying a lot of time outside - whether I’m lifeguarding, doing online classes outside, running (hehe), or just hanging out with family, I love being in the sun! So here’s a little reminder to go get your vitamin D in! Have a meal outside, go on a little podcast/nature walk, whatever works for you! I promise it’s worth it (as long as you stay hydrated runners!) Haha. Anyways, I hope everyone is having a beautiful summer and lots of sunny runs! Let me know in the comments what time you have to wake up to beat the heat! 🤣

Happy running! ☀️🍉 by @ellies_balance

🌅 ✈️ Life lately & travel!! ✈️🌅

Hey y’all! It’s been a little bit since I got back from school for summer break, and I have been loving spending every minute with my family! We always take our summer vacation early, so everyone can enjoy the rest of the season at home. This year we decided to go on a Disney cruise! We traveled on the Disney dream, and it was so much fun! We all even got to run a 5K on the ship where I got first place female! While I didn’t have any structured training for the Marine Corps marathon during the vacation, it was still a lot of fun to do some “random” runs here and there. I will say, though, I did not expect the jet lag to get me like it did haha! We were six hours ahead of the time I usually have, so I’m still catching up lol. Overall, though, it was a lot of fun and a great way to cap off the school year! We made a lot of great memories, and I am super ready to take on the official build for the @marinecorpsmarathon in October!! Tell me in the comments what your favorite summer plans are!
