had such a busy summer with coffee events happening left and right, feels so freeing to be done (for now)⛓️‍💥 this was my cafec comp recipe - very much inspired by matt wintons 5-pour. i experimented with various recipes, but i loved the consistent results this one gave me, and how simple the variables were to adjust - same flow rate throughout, simple pour pattern, only had to adjust dose, grind size, and temp day of comp. i made it my goal to understand how this recipe works and how to dial in on the fly. the biggest learning curve was realizing I had to go a lot coarser and hotter than I’m used to for this roast profile. which shortened the total brew time to reduce any bitterness, but still extracted enough for transparent flavors. happy to get to compete again, and to have served something i was proud of! @loquatcoffee Costa Rica (didn’t catch which producer) Geisha Honey Cafec Flower Dripper 02 / Cafec Abaca Filter 23g dose: 300g brew 52 clicks on C60 temp: 92c + 87c 0:00 - 60g 0:25- 60g 0:35 - 60g 0:50 - 60g 1:05 - 60g tdd: 1:30 Apax Lab (ty christian) 6x april 3x jamm 1x lylac by @ephmrl.c

DEBUT POP UP / NOV 16 9AM-1PM AT OMO MERCADO I’m excited to announce my first pop up with Geo and Hailey from @romacoffeecollective ! I first met them last year and was inspired by their love for coffee as a tool to create community. I’m so excited to finally collaborate with them on this event and serve my drinks for their residency! I’ll be featuring a Natural Anaerobic Ethiopian coffee from Benti Nenka, roasted by MAME (Zurich) and served three ways: pour over, milk bev, and signature. MAME is one of my favorite roasters for how consistently clean and balanced their coffees are, and I’m looking forward to highlighting it in my menu! I’m also sharing pastries from @madebyabby_ (her page speaks for itself lol so good) Designs by @angelynnliu 🥹 by @ephmrl.c

Recently I’ve been inspired by the fleeting, but cherished experience of coffee. As a natural product, each cup will never the same, but the memory of its best moments lasts forever.
