This was SO GOOD and we’ve had leftovers for days!!! Recipe below!

Ingredients:

* 1 tbsp olive oil
* 1 lb medium shrimp, peeled, deveined, and tails removed
* ½ tsp each: chili powder, Mexican oregano, paprika & cumin
* ½ tsp salt
* ½ tsp black pepper
* 1 onion, chopped
* 1 red bell pepper, chopped
* 1 poblano pepper, chopped
* 2 garlic cloves, minced
* 1 cup long-grain white rice (jasmine or basmati)
* 1 cup salsa
* 1½ cups water
* 1 (15 oz) can sweet corn, drained
* 1 tbsp lime juice
* Optional: sliced avocado, chopped cilantro & fresh lime wedges

Instructions:

1. Pat shrimp dry with paper towels.
2. Heat olive oil in a large skillet over medium-high heat. Add shrimp, spices, salt, and pepper. Toss to coat and cook for 2–3 minutes, until pink and cooked through. Remove and set aside.
3. In the same skillet, add more olive oil if needed. Sauté onion, red bell pepper, poblano, and garlic for about 4 minutes, until softened and fragrant.
4. Add rice and toast for 1–2 minutes, stirring occasionally.
5. Stir in salsa, water, and corn. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until rice is cooked and liquid is absorbed.
6. Return shrimp and any juices to the skillet. Add lime juice and stir to combine.
7. Serve topped with sliced avocado, cilantro, and fresh lime wedges. Enjoy! 🤍

A productive work day even with my girl home with me. Yes, you can work full-time and build your side hustle on social media but it takes A LOT of strategic discipline and motivation and tbh I don’t have those a lot of the time being reallllll pregnant 🤣😵‍💫😐 but this was a lunch break done right!
