One of my favorite ways to unwind that (usually) doesn't involve yelling: making pie. I've taught a ton of people how to make a perfect #allbuttercrust for they're #pie and we're gonna speed run it here with a few pro tips, plus a little #teslatakedown bonus content. #Recipe below!

Ingredients
(Makes two crusts)

2.5c flour (replace with Bob’s Red Mill 1-1 Baking Flour mix for Gluten Free)
2 sticks unsalted butter (very cold, ideally frozen)
3 tbl sugar (for savory pies, reduce this to 1.5 tbl sugar)
8 tbl ice water
1 tsp salt

Put flour, salt and sugar in a food processor, pulse.

Cut butter into tablespoon-ish pieces, add to processor, pulse 3x for 5 seconds each.

Add two tbl ice water, pulse 3x for 2-3s.

Repeat until 8 tbl have been added. The crust will be “climbing” the sides of the food processor, but it shouldn’t be wet or gummy. If there are still big butter chunks, pulse a few more times.

Divide in half and press firmly into disks. Flour surfaces well. If the butter was not fully frozen or it's just too sticky, refrigerate for 30 minutes to cool it, then roll it out.

Trim to about 1/2" of overhang around the edges of the pie plate, then fold it over and crimp with your fingers.

Once it’s rolled, freeze the crust for at least an hour, ideally 24 hours. This will help the crust keep its shape when you bake it. Crusts can be frozen in the tin for months.

If the recipe calls for a partially baked crust (typical for pumpkin and pecan, e.g.): butter or grease the shiny side of a sheet of foil and press it into the tin, greased side down. Add pie weights (or dry beans or rice), bake at 400 for 20 minutes/ Remove foil and weights, and bake another 4-6 minutes until just starting to get golden, then cool until ready to use.

For a fully baked crust (usually cream pies) remove foil and weights, bake for another 8-10 until golden. Don’t over-bake - the color will deepen as it cools
